Korean Beef & Rice Bowls


The Fish Fam loves loves these Korean Beef & Rice Bowls!

They are super quick and easy....

  • 2 lb. ground beef
  • 4 garlic cloves
  • 1/3-1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 4 tsp. sesame oil
  • 1/2 tsp. ground ginger
  • 1/4-1/2 tsp. red pepper flake
  • 1/4-1/2 tsp. black pepper
  • 3-4 green onions to garnish
  • Sesame seeds to garnish
  • 3 cups white rice
  1. Clean and wash your rice and start cooking.
  2. Cook ground beef and garlic until brown. 
  3. Mix brown sugar, soy sauce, sesame oil, ginger, red pepper flakes, and black pepper together.
  4. Cook for a few minutes and put it over cooked rice. 
  5. Garnish with green onions and sesame seeds.

Delicious Baozi!


Today we made delicious homemade baozi! 


I pan fried some and steamed the rest.


I made the pork filling and the dough, both of which I doubled.

Pork filling from Red House Spice:
  • 250g / 9oz minced pork
  • 2 stalks spring onion, finely chopped
  • 1/2 tablespoon ginger, minced
  • 2 teaspoons light soy sauce
  • 1/2 teaspoon Shaoxing rice wine
  • 1/2 teaspoon pure sesame oil
  • 1/4 teaspoon salt
  • 1 pinch Chinese five-spice powder
  • 5 tablespoons water (or chicken stock)


The dough raised nicely, then my youngest came and patted it down. 


All set up and ready to fill.


The pork filling smelled soooo gooood!


My kids made an assembly line and filled and bao-ed the buns.

They did a great job!!


They were delicious and filled with lots LOVE!!!

Instant Pot: Ribs, Mashed Potatoes, and Broccoli



If your looking for a good instant pot bbq ribs recipe this one is really really good and really really easy! It's definitely a Fish Fam Favorite.


Pressure Cook Recipes has some really great IP meals. I use them a lot.


I have two Instant Pots so in one I cooked the ribs in one, mashed potatoes in the other, and steamed the broccoli on the stove. Super easy and super good.



Dish it all up and serve. YUM!

Life Saving Leftovers: Teri Chicken Sauce Over Rice


I really love making dinner, but sometimes it's nice to rely on leftovers, especially when we are in a rush or I don't feel well and the leftovers become life savers!!!

Our Hawaiian Teriyaki Chicken from a few nights ago came to the rescue.

Heated up the sauce on the stove.
(We don't have a microwave)
Cooked some white rice.
Steamed some edamame beans.
Cut up some bell peppers and carrots.

Dinner is served!

With green beans, fried tofu, and cut up veggies.

Instant Pot: Saucy, Tender Pork Chops


The Fish Fam loved these tender and saucy pork chops. I put them down on their plates, we blessed the food, and then I got up to grab something in the kitchen. I was only gone for a couple minutes, but when I came back there weren't any pork chops on their plates and they were licking their chops saying, "These are the best, can you make them tomorrow too!"

Hahaha! I was like did you really just down that whole pork chop?!!

I love love my instant pots and put them to work everyday. They do a great job at making meat tender and juicy. Something that I couldn't really do in the oven or on the stove top.

If you have an Instant Pot and have it sitting on your counter (unused) don't be scared!!! Get it out and put it to work!! You'll be so glad you did.

Instant Pot: Un-Stuffed Cabbage Bowls


I used Skinny Tastes recipe as a start and made my own alterations. My family said it was really good!

I love using my instant pot and this recipe was fast and easy!


Add some salad and it's ready to serve :)

Navajo Tacos



I grew up eating Navajo Tacos and they are my favorite! 

 I'm trying to master my dough which is proving to be hard, but I'm getting better. I want it to be just like my mom's and Shimassani's (maternal grandmother) bread!!!! Growing up I never helped make the dough, but I helped flap and fry it. Those are some of the best childhood memories I have!!

Navajo grandmas are pros and don't use any measuring tools and just ust their hands and eyes to measure. But, here is a general recipe with measurements! Also, for starters start by cutting the recipe in half. I learned better that way and if I messed up I didn't have as much that I messed up, lol! Also, I find that the warmer/hot, more on the hot side the water is, the better my dough comes out. Good luck!

Navajo Frybread

4 cups flour
2 tbsp. baking powder
1 tsp salt
2 tbsp. crisco or vegetable oil
1 3/4 cups warm/hot water


2-3 cups vegetable oil or Crisco for frying

Directions:

1. Mix together flour, baking powder, and salt. Add oil and mix. Make a well in the middle.

2. Pour 1 cup of the water into the well and stir together with hands or spoon. Slowly add water little by little, as needed, to make dough come together until you can knead it until it's no longer too sticky, but soft. A little sticky is ok. 

*Warmer water a little on the hot side makes the dough softer.

*I don't always add all the water. It just depends on the dough. Add it slowly as needed.

3. Put it in a lightly greased bowl and cover with a towel or plastic wrap. Let it sit for up to 30mins in a warmer area. The longer it sits the softer the dough will get and makes it much easier to flap and stretch.

4. While the dough is resting put the oil (which I always add by eye) into the pan and start heating it up. It just depends on the size of your pot. You need just enough oil to slightly cover the stretched out dough. Once it reaches its smoke point, you'll start to see smoke rising, it's ready and you may want to turn it down a little bit. To check if it's ready tear off a tiny peice of dough and put it into the hot oil and see how fast it cooks. This helps better determine if the oil is ready. You want the dough to cook pretty fast, until a nice golden brown. Use a fork to take out the cooked dough.

5. When the dough is ready tear off a tennis ball size or smaller piece of dough and form into a ball. 

6. You can use a rolling pin to flatten it out or use your hands to stretch it and flap it out like a true Navajo! Aye ;)

7. Carefully put it in the hot oil pan or cast iron skillet with a hole somewhere in the dough, I like to lay it down going away from me slowly in the oil. This keeps the oil from splashing on you. The oil is extremely hot and will severely burn you if you're not careful. I always wear an apron and try to wear long sleeves. Small amounts of oil will pop out of the pan, so be careful. This is why you don't want it too hot and to use something long like a fork or hook or good pair of tongs to flip it. Flip it when the edges start getting brown. It should cook pretty fast and will be a nice golden brown color.

8. Put the fry bread in big enough pan or bowl standing up with a paper towel at the bottom to soak the grease.





Now all you need are the toppings....


Chili beans (check out my Picante Chili recipe), chopped iceberg lettuce, cheese, onions, salsa, and sour cream are great toppings!

*It's easier if you tear the bread up before putting the toppings on.

Picante Chili


These chili beans are super easy to make in the Instant Pot!

I named it Picante Chili because you add a big jar of Picante salsa. I've tired other salsa brands and the Fish Fam loved the Picante kind.

Ingredients: 
  • 6 cups soaked overnight pinto beans
  • 3-5 slices of bacon or 1/2-1cup pre chopped bacon (in bag)
  • 1lb. hamburger meat
  • 1 chopped onion or died chopped onion
  • 1 tbsp of diced garlic (3 cloves)
  • 2 Tbsp Chili powder
  • 1 Tbsp of smoked paprika 
  • Salt and pepper as desired
  • Few dashes of Cayenne powder, if you want it spicier
  • 24 oz. jar Pace Medium Picante Sauce
  • 24-30oz of water (enough to just cover the beans)
Directions: 
  • Soak the beans overnight (will cook better & be softer)
  • Cook the bacon slices. Don't have to cook fully. 
  • Clean the pan out a bit and fry some of the onions and garlic.
  • Add the hamburger meat and cook. Don't have to cook all the way.
  • I like draining the fat. 
  • Chop and add bacon pieces. 
  • Add all the spices....



  •  Add everything to the pot....


  • I fill the empty picante jar with water, about a jar and a half or so, just enough to cover the beans. 
  • Set at manuel for 110 mins.
  • Let it naturally release for about 25-30 mins. or longer. For safety reasons do not do a quick erase and let the IP do a natural release.  If you instantly release the pressure the high pressure in the pot will shoot steaming hot liquids out of the vent (depending on how full the pot is). Letting it naturally release will cook the beans longer, which is fine.


  • Serve over Navajo Tacos, rice, baked potatoes, we like to serve them over lots of cauliflower, or anything you'd like!

Instant Pot: Baby Back Ribs


If there is one thing I never imagined myself making it's ribs, especially in my pressure cooker! In the past IF we ever ate ribs it was the Costco pre-cooked packaged ribs WHEN they were on sale. Ha! But, my hubby doesn't like them, so it's been a really long time since him or the kids have had them. My little meat eating carnivores love bbq ribs, so they were so happy to have these!

I found this recipe for my Instant Pot: "The Greatest 'Fall off the Bone' Braised Baby Back Ribs" at Great Chow TV.

It's incredibly easy to make...


Ingredients: Apple juice, ACV (Apple Cider Vinegar), and BBQ Sauce (The Sauce Is Boss).

First you put 4 cups of the apple juice into the pot. Then about 1/8-1/4 cup AVC (in the video the guy says to pour it in for 2 seconds). The ACV will tenderize the meat and add flavor. 

After it's done carefully pull out the ribs (they fall apart easily)!

Then slather them with your favorite BBQ Sauce.

I need to find a good homemade BBQ sauce recipe!! But, for not The Sauce is Boss is always a good go to. 


I made these for the Missionaries who came over for dinner the other night. After blessing the food we uncovered the ribs and the Elders expression was priceless..."OH WOW!" 

They enjoyed them with some homemade potato salad, sweet potato fries, green salad, and organic mac  n' cheese. Not much was left. Lol!


The Fish Fam can't wait for more fall off the bone ribs!

There are more baby back rib recipes out there, which I'm looking forward to trying, especially without apple juice, but I think it's safe to say the apple juice/acv bath was a good one!

Instant Pot: Pot Roast


Dinner in an instant. Even a pot roast! 

After picking up the kids from school we went to the grocery store at 3:30 and bought some groceries for dinner. Next, homework from 4-5pm. Finally, at 5:10pm I started prepping dinner and the roast went in the IP at 5:20. By 6:30pm dinner was served. 

The Fish Fam loved it!

Sounds to good to be true right? Well, you can only see for yourself!

I highly recommend this Instant Pot pressure cooker. You won't be sorry!

Green Chicken!


This is Nom Nom Paleos amazing recipe called...My Sister's Phenomenal Green Chicken that I made for dinner. Which was the closest thing we did to celebrate St. Patrick's Day, last week being that we were going to be traveling. 

All my hubby says is,"Wow, Wow, Wow. This is so good." While eating it. Others have enjoyed it a lot too. The flavors are just too excellent to not!!

Here’s what I gathered to make enough grilled drumsticks to feed 4-6 people:
  • 1 medium sweet onion, peeled and coarsely chopped (about 1 cup)
  • 1 cup packed cilantro leaves and stems
  • 1 1/4 cups packed basil leaves
  • 1/4 cup packed mint leaves
  • 4 tablespoons of  Red Boat fish sauce
  • 3 peeled garlic cloves
  • zest of 1 lime
  • plenty ground black pepper
  • 1 teaspoon of Aleppo pepper
  • 2 tablespoons of apple juice (or 1 teaspoon of maple syrup if you’re not on a Whole30)
  •  Kosher salt
  • 3 pounds of chicken drumsticks or thighs
Directions:

Put everything in the blender, except the chicken. Put the chicken in a ziplock bag and pour the marinade in. Let it marinate for at least an hour, but overnight up to a day is best. I like to poke the chicken with a fork all over to get more of the flavor soaked in. 

Cook it up on a grill or to bake it out it on a wire rack and cook for 35-45mins at 400 deg F. and flip the chicken at 20mins. *I keep it in the marinade and bake in a dish. 


The cilantro and basil go great together, but I think one of the secret ingredients is the fish sauce, especially the Red Boat Fish Sauce she recommends. We love cooking with fish sauce and if you do you'll know that...It smells soooo bad, but tastes soooo good!

Slow Cooker Coconut Curry Chicken


This curry smelled so delicious!

In the morning I chopped up everything and then put it all in the crock pot.

Then when my kids came home they sniffed their little noses and said, "Is that curry??" Yay!"

I used chicken drumsticks, so it may not look like curry, as the meat slow cooks it just falls off the bone and shreds so nicely!

The Fish Fam ate most of it, but we had a little bit left over and were going away for the weekend so I passed on all my leftovers to my neighbor. She then wanted this recipe. Here it is Rebecca...

Slow Cooker Coconut Curry Chicken:

Ingredients
  • 2 lb boneless skinless chicken breasts or chicken thighs, cut into cubes
  • 5 large carrots, peeled and diced
  • 1 medium onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 1 large bell pepper, seeded and chopped (I used a green pepper)
  • 1 (5 oz ) can tomato paste
  • 1 (14 oz) can coconut milk
  • 1 1/2 tsp salt
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 jalapeno, seeded and halved OR 1 tsp crushed red pepper flakes
  • 2 tbsp water
  • 1 1/2 tbsp cornstarch
Instructions
  • 1
    Grease your slow cooker with Pam. Place the chicken and carrots on the bottom of slow cooker.
  • 2
    Place the rest of the ingredients (except water and corn starch) in a food processor and process together until mixture is mostly smooth. ***If your food processor is too small to hold everything, process everything but the coconut milk. Transfer mixture to a medium bowl then mix in the coconut milk.
  • 3
    Pour the sauce over the chicken and carrots, mix well, then cover and cook on low for about 6 hours.
  • 4
    An hour or so before serving, mix cornstarch and water together in a small bowl until cornstarch is dissolved. Pour mixture into the slow cooker, stir to combine, and continue cooking for another hour. **This will thicken up the sauce. When the sauce is to your desired thickness, turn slow cooker to warm setting until ready to serve.
  • 5
    Serve over rice, with Naan, and garnish with cilantro.
Notes
  • *if you want you can chop the bell pepper into larger pieces and place in with the chicken and carrots rather than processing into the sauce. This is what I did and we loved the different textures of the carrots, chicken, and pepper in the sauce.

    Plenty more for leftovers...

Sticky Sesame Drumsticks


Another good chicken marinade!

Sticky Sesame Chicken Drumsticks

Recipe by Michells Southan

Ingredients
  • 1/3 cup tomato sauce
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 T sesame seeds

Directions
  • Combine the tomato sauce, soy sauce and honey in a glass or ceramic bowl. Add the chicken and toss to coat. Cover and place in the fridge for 30 minutes to marinate.


  • Preheat oven to 200°C. Line a baking tray with non-stick baking paper. Place the chicken on the tray and bake in oven, turning once, for 40 minutes. Sprinkle with the sesame seeds and bake for a further 15 minutes or until the chicken is golden and cooked through. Place on a serving platter and serve with sweet chilli sauce.

*I didn't follow the cooking instructions. I just baked all the chicken together in a baking dish for 25-30 mins 375 degrees. Checking the internal heat, which shouldn't be all the way cooked through yet. And then placed them spaced out on a baking sheet lined with tin foil for 10 mins. Then turning on the broiler to get the charred look for a minutes watching them and then flipping them and broiling for another few mins.

Next up…
Soy and Chile glazed Brussels Sprouts...
Ingredients
  • -1lb Brussels Sprouts
  • -4 green onions
  • -2 T orange juice
  • -1 T soy sauce
  • -1 1/2 tsp honey
  • -1/4 tsp crushed red pepper
  • -1 clove of garlic minced
  • -1 1/2 tsp oil

Directions
    • Trim Brussels sprouts;** cut lengthwise into quarters. Finely chop one of the green onions; cut the remaining three green onions diagonally into 1-inch pieces. In a small bowl stir together orange peel, orange juice, soy sauce, honey, serrano pepper, and garlic. Set aside.
    • Working in a well-ventilated area, in a large skillet heat oil over medium-high heat. Add Brussels sprouts, mushrooms, and green onions. Cook and stir for 8 to 10 minutes or until sprouts are blackened in places and are nearly tender.
    • Pour orange juice mixture over sprout mixture; toss to coat. Cook and stir for 3 to 4 minutes more or until sprouts are tender.
*To trim Brussels sprouts, cut off the stems just at the spot where the leaves start to grow. Remove dark green outer leaves until the tender, light green leaves are uniformly exposed.
I used cauliflower and not mushrooms and baked it in the oven. At first The Fish Fam didn't really enjoy the flavor of the Brussels Sprouts, but said it was just weird at first and then got better.



Last but not least I cooked the brown rice in my amazing pressure cooker.

It was done in about 30mins. Wow!

Usually, cooking time fore brown rice is hours!
