Homemade Superhero Pizza's!

For our little superhero's birthday party we made homemade superhero pizza! Recipe I use below. We usually make pizza's with half no cheese and the other half very little cheese. these ones we loaded it on to get better color. The kids loved them! The Batman pizza was the only veggie, ha, with olives only.

Basic Pizza Dough

1 tablespoon active dry yeast
1 cup warm water (105-115 degrees)
2 1/2 tablespoons applesauce
1 tablespoon agave
1/4 teaspoon sea salt
3 cups organic white flour

*I use applesauce in place of oil, agave in place of honey or sugar, sea salt instead of table salt, and organic flour instead of regular white flour.

1.  Mix the yeast and water in a small bowl, cover, and let stand until foamy, 5 to 10 minutes.   (Add a teaspoon or less of sugar if you'd like, sugar make the yeast more lively.)
2.  Mix the applesauce, agave, sea salt, and yeast mixture in a large mixing bowl.  If using a food processor, add 1 cup of flour at a time, up to 3 cups, mixing well after each addition.  You may have to stir in the third cup of flour by hand, depending on your machine.  Or mix in all 3 cups of flour by hand with a wooden spoon.
If the dough seems too wet, mix in more flour, 1/4 cup at a time until the dough is soft.  Turn the dough onto a floured surface and knead in more flour, 1/4 cup at a time, until the dough is moderately stiff and somewhat firm to the touch, about 6 minutes. (I've noticed that making the dough with applesauce in place of oil makes the dough more flaky, but nonetheless always turns out fine and tastes great. If it's too flaky add a little more applesauce next time.) 
3.  Lightly grease pizza pan with oil and roll into shape desired or breadsticks etc.  Let rise a couple of minutes before putting toppings on. (Letting it rise always makes the applesauce dough easier to roll out.)

For bread sticks:  roll into sticks and brush with butter and garlic salt.  Let rise for about 15 minutes and then bake at 425 for 10 minutes, brushing with more butter/garlic halfway through.

  It's a soft but not sticky dough.  It's really fast and easy!

Homemade Veggie Pizza

My kids love helping make homemade pizza and even better they love eating it! On half of the pizza I put a little cheese and the other half no cheese. Topping are onions, bell peppers, mushrooms, fresh basil, and zucchini really, the options are endless with toppings. For the crust I've done white and whole wheat, both tasting great. Just get online and test out different recipes. Making the dough isn't as hard as I thought it would be, but then using my Kitchen Aid mixer helps a lot! If you do make whole wheat crust just be prepared to wait about two hours for the time it takes to rise! Here is the whole wheat recipe I've used and here is a fast and easy recipe, I got from a friend, for the white crust...

Minestrone & Breadsticks



I came across this Minestrone Soup Recipe and wanted to make something like it.

I soaked Anasazi Beans for 8 hrs. & then cooked them.
Drained them and *saved the reserves.

In a large pot I added 48oz of chicken broth & bean reserves.
I added bay leaves and a fresh rosemary sprig.
Next, I chopped up and threw in the pot...

Onions
Garlic
Celery
Carrots

Later, chopped, added, and cooked until soft...

Zucchini & Potatoes
Semi-cooked Italian Sausage
Kale & Parsley

Lastly, I added the cooked beans, fresh parmesan cheese, and pepper.

While the soup was finishing up I made some Pizza Factory Breadsticks, which a friend made, so I had to try!

 
I changed the recipe a little bit by adding butter in the batter.
Butter always makes for better bread. YUM.

Recipe here at Six Sisters Stuff

1½ cups warm water
2 Tbsp. sugar
1 Tbsp. yeast

Mix until smooth then let raise for 10 minutes. Roll out dough into a large square on a floured surface. Brush with melted (real) butter mixed with garlic and then sprinkle with kosher salt. Fold in half and cut into 1 inch strips. Twist and place on a cooking sheet. Let sit for 15 to 20 minutes to raise. Bake at 400 degrees for 20 minutes or until golden brown. Immediately after baking, brush with more garlic butter and sprinkle with kosher salt and grated parmesan cheese.
Serve with marinara, alfredo sauce, or ranch for dipping.
*Dough also makes a great pizza dough, just roll out into a large circle, add your favorite toppings, and bake at 400 degrees for 15 to 20 minutes.

 
*I added 2T of butter in the recipe. It made the dough sticky, but I just added more flour accordingly.

I made some Honey Butter from organic raw honey and grass-fed butter.

It gave the breadsticks the perfect touch. The fish fam said, "We like these so much better than the other ones you make!" Lol.

Coconut Sugar Cookie Fruit Pizza


I made these mini fruit pizza cookies for my friends and they loved them!

I couldn't eat them because of the grains and sugar in them, so I'm very happy they passed the test!

Everyone said they were more than good and of course my family loved them too. 

My mom used the make this delicious treat for us every once in a while and oh my goodness she makes the best sugar cookie dough and this was one of our family's favorite treats. I didn't use my mom's recipe. I found one on my All Recipes app that wasn't going to take long... Easy Sugar Cookie Recipe

I didn't have any butter, so I used coconut butter (Artisana Coconut Butter, which is my absolute favorite), but it didn't work. The dough was super crumbly and not sticking together. So, I cracked in another egg and added coconut oil in tablespoon by tablespoon until the dough started sticking together.  I usually use coconut oil instead of butter, but because the weather is so warm here in Hawaii, our coconut oil is always liquid. I needed softened coconut oil, so the cookies wouldn't be flat as a pancake! 

I rolled them in balls and then mashed them and flattened them out in my hands. Which they were still a bit crumbly and would crack easily, but it worked!

Everyone said they were soft and delicious! Thank goodness!

I was going to make a coconut whip cream, but I didn't want to overdue it on the coconut and I was pressed for time. Luckily, thanks to Thanksgiving there was a can of whip cream in the fridge at my in-laws that all I had to do was shake the can and out it came. Then top it with apple-banana slices, strawberries, and kiwis and it looks beautiful!

Use your own favorite sugar cookie recipe and sub out butter with coconut oil for an extra good coconut-a-nutty taste and top it with your favorite fruits!

Halloweenies and Pesto Pasta



These simple and fun Yummy Mummies aka Halloweenies are one of my kids favorite things to make and eat during Halloween!!

I make the dough from scratch. I always use Six Sisters "Homemade Pizza Factory Breadsticks" recipe. Super easy, but does take a little bit of time due to rising.

1½ cups warm water
2 Tbsp. sugar
1 Tbsp. yeast

Let that sit for 5 minutes. Then add:
3½ cups flour
1 tsp Salt

Mix until smooth then let raise for 10 minutes. Roll out dough into a large square on a floured surface. Brush with melted (real) butter mixed with garlic and then sprinkle with kosher salt. Fold in half and cut into 1 inch strips. Twist and place on a cooking sheet. Let sit for 15 to 20 minutes to raise. Bake at 400 degrees for 20 minutes or until golden brown. Immediately after baking, brush with more garlic butter and sprinkle with kosher salt and grated parmesan cheese.
*I always end up needing a little big more flour so it's not sticky. For these Halloweenies I didn't do any garlic or parmesan cheese, but I think I should've. And I usually add olives for the eyes, but didn't have any, so raisins it was. These have always been the best breadsticks ever, or in this case Halloweenies ever!

I served them with some homemade pesto over Barilla tri-colored spiral noodles and some very cute Charly Brown Halloween pasta....


My kids love the homemade basil pesto that I make. It's something that I can't eat because of the garlic and cheese in it, but oh my goodness it smells so good. Basil makes everything smell so wonderful!


Basil Pesto is super easy to through together and no need to follow a recipe, 
but here is a recipe to follow:

2 cups Basil
1/2cup Parmasean Cheese
1/2cup extra-virgin olive oil
1/3cup pine nuts
3 garlic cloves
Salt and pepper to taste

Put it all in a food processor and blend.


They said, "This is the best dinner ever mama! We love Halloweenies because mummies are so yummy! And your pesto noodles are always the BEST!!"

Superhero Pizzas



I have quite the Superhero crew!

So for birthday dinners these are the favorite! They are lots of fun to make.

Use this recipe from Six Sisters Stuff to make the dough.

The Fish Fam said this crust was the best yet.
My yeast this time foamed the best ever.
I added in more flour than usual just a little little bit at a time.
Until it felt nice and smooth and just right!
And I gave it enough time to rise.

Next find or make a good pizza sauce.

Then add all the toppings and create...

Batman: black chopped up olives, mozerella, & cheddar cheese

Captain America: pepperoni, blacked chopped olives, and mozerella

Superman: pepperoni, mozerella, & cheddar cheese
