Watermelon Smoothie

My husband made this yummy watermelon smoothie or more like watermelon slushie! He scraped out half of a cold watermelon, put it in the blender with ice, and then served. I buy a lot of watermelon, but the trick is finding the ripest, sweetest, juiciest, and tastiest one! My dad always picked the best watermelon and that's because growing up he would go pick watermelons in the garden. He says all you gotta do is give them a good flick and see which one sounds the most hollow. Over the years I've been able to get some pretty tasty watermelons by following his advice!

"3 Colors" Juice

These three photos are all the same cup of juice, but before adding everything in and then taking the picture, I split it all up so you could see how much the color changes according to the fruit or veggie put in. This cup has organic carrots, organic green apple, organic cabbage, oranges, lemon, & lime.

Then I threw in about a 1/4 of a beet...love the color beets give!

Can't go without adding a bunch of leafy greens! They just don't make the bright vibrant colors of other fruits and veggies.

Baby Juice

Butternut Squash Pasta

I know this is not the prettiest photo, in fact I know not all of my food photos are. So, bear with me as it is a work in progress. :) These are organic pasta noodles with Dave's Gourmet Butternut Squash Pasta Sauce (excellent deal at Costco). I chopped up red onions and garlic (I love these two ingredients) and cooked them in the organic ground turkey meat on the stove. I chopped up zucchini and then threw them and the corn in the pan with the sauce and let it warm up, not cooking too long. I also like putting in raw pine nuts in pasta, something I picked up from a friend...Thanks Letha!

Black Bean Burger

I get these Chipotle Black Bean Burgers at Costco. They are really good, but have a lot of ingredients. We need to find a good homemade black bean burger recipe. If you know of one let me know, thanks! I put organic hummus and dijon mustard on multigrain rounds. For the toppings I put raw zucchini, baby portabella mushrooms, red onions, and spring mix salad greens. Yum!

This Mornings Juice

 I took this with my phone, so the coloring a little bit off, it's just really bright. Organic carrots, oranges, organic green apple, organic beet, cucumber...

Then I added a bunch of organic spring mix salad greens in the blender. I like taking before and after photos because the greens always turn it a brown color. I love the bright vibrant juice colors, but the greens is where the most nutrients are!

Simple Salmon

Alaskan wild caught salmon, organic quinoa, organic spring mix salad w/ carrots, tomatoes, and cucumbers. I used Zesty Pepper & Lemon Seasoning Salt on the salmon and broiled them. I also love eating fish with freshly squeezed lemons.

Orange Smoothie

Fresh squeezed orange juice, organic baby carrots, banana, orange, organic cabbage, organic spinach, organic raw coconut flour, & ice. I threw it all in the Vita-mix and...

Haha, it came out more green than orange, but still super good. I added coconut flour for a protein boost. I called it an orange smoothie because there are a lot of orange ingredients and the pic below is the sample cup of this exact same recipe at Costco when they were doing demos of the Vita-mix.

I guess I added more spinach and cabbage than they did. If you are looking for a great blender I would recommend the Vita-mix, they are rated the #1 blender of 2012. We got ours about 5 years ago at Costco. It's a super good deal at Costco.

Veggie Kabobs

These veggie kabobs were so good! We went to a friends BBQ the other week and she went all out with good quality food. I came to the party super hungry and was so glad they had so many vegetarian options. She had this cilantro chutney that was incredibly good. I have since made my own veggie kabobs. They weren't as good as these kabobs, next time!

Raspberry Breakfast

 These raspberries are so so good...amazing! They are sold off and on at Costco. They are an incredible deal and I hope they stay that way. The last batch I bought was Organic for $4.49. I can't remember how many ounces, but it's the same amount as the pic above. 

We love eating them plain and also in cereal. Wheat flakes and Ezekiel Sprouted Grains Cereal with organic almond milk. 

Blended Juice

 Organic Carrots, organic beet (with stems), organic celery, organic parsley, organic kale, red apple, orange, lemon, ginger. 

I juiced everything except the beet greens, kale, and parsley. I blended those into my juice using my blender. I do that so I'm getting all the goodness from the leafy greens.

Grilled Cheese Tuna With Organic Soup & Salad

Grilled cheese tuna sandwich with an organic salad and organic red pepper tomato soup!

Baby Juice

Organic pear, organic carrot, organic celery, cucumber, and a little sliver of ginger. I use a quarter of the pear, but for a better picture I wanted half of the pear. After I juice these I dilute it with half or more than half water. It's really important to dilute your little ones fresh juice. The enzymes are strong and could cause an upset stomach, diarrhea, and diaper rash.

Veggie Stir-Fry

We love making stir-fry dishes. I basically stir-fry any veggies I want. I add some water and soy sauce (I also use Bragg Sauce) then put a lid over it to let it steam for a couple minutes. I add eggs, a little more soy sauce, a little vinegar, sometimes just a tiny bit of sweetener (sugar, agave, etc.). Let it all cook and put it over rice!

Oatmeal & Mangoes

This morning my kids wanted mangoes in their oatmeal. We don't live in a tropical area, so the mangoes sold here are really never that good, but luckily we found some at Costco...Atafla, Philippino, or Champagne mangoes (whatever you want to call them) that are amazing!

"Spicy Juice" With Ginger & Cabbage


Organic Kale, Organic Beet w/stem&leaf, Organic Cabbage (just a tiny bit), lemon, Oranges, Organic Red Apple, Organic Carrots, Celery, Organic Spinach, and Organic Ginger Root!

*Ginger always gives it a nice kick and the cabbage gives it a nice spiciness, that stings your throat a little. :)

Chocolate Chip Pumpkin Bread

This bread is too good to be true! My kids love helping make it and the spices make our house smell so good while it bakes! Here is the recipe. I use organic unbleached flour. I've substituted the sugar with agave and need to work on substituting other ingredients like the oil with applesauce and try other flours.  

Broiled Herb-Crusted Salmon

This broiled Salmon was so good, try the recipe here. I also cut up red potatoes in cubes, spiced 'em up, and then baked them. Served with fresh organic spring mix/spinach salad (red onions, carrots, tomatoes, and cucumbers). Very good!

Homemade Chicken Noodle Soup

There's nothing better to eat than homemade chicken noodle soup when you have a cold during the winter months. I put about five chicken thighs in a big pot of boiling water for a couple hours. In the meantime I cut up garlic, onions, carrots, and celery. I take out all the chicken thighs and the meat should be soft enough that it almost slides off the bone. I dump in all the veggies. Then I take two forks and shred the meat up. I add in spices like oregano, basil, bay leaf, rosemary, thyme, etc. I put the chicken back in and add dry egg noodles. Everything is up to you, but this basically what I do!

Homemade Veggie Pizza

My kids love helping make homemade pizza and even better they love eating it! On half of the pizza I put a little cheese and the other half no cheese. Topping are onions, bell peppers, mushrooms, fresh basil, and zucchini really, the options are endless with toppings. For the crust I've done white and whole wheat, both tasting great. Just get online and test out different recipes. Making the dough isn't as hard as I thought it would be, but then using my Kitchen Aid mixer helps a lot! If you do make whole wheat crust just be prepared to wait about two hours for the time it takes to rise! Here is the whole wheat recipe I've used and here is a fast and easy recipe, I got from a friend, for the white crust...

Basic Pizza Dough

1 tablespoon active dry yeast
1 cup warm water (105-115 degrees)
2 tablespoons olive oil
1 tablespoon honey
1/4 teaspoon salt
3 to 4 cups all-purpose flour


1.  Mix the yeast and water in a small bowl, cover, and let stand until foamy, 5 to 10 minutes.   (If you'd like add 1 teaspoon of sugar to this just to make the yeast lively)

2.  Mix the oil, honey, salt and yeast mixture in a large mixing bowl.  If using a food processor, add 1 cup of flour at a time, up to 3 cups, mixing well after each addition.  You may have to stir in the third cup of flour by hand, depending on your machine.  Or mix in all 3 cups of flour by hand with a wooden spoon.

If the dough seems too wet, mix in more flour, 1/4 cup at a time until the dough is soft.  Turn the dough onto a floured surface and knead in more flour, 1/4 cup at a time, until the dough is moderately stiff and somewhat firm to the touch, about 6 minutes.

3.  Lightly grease pizza pan with oil and roll into shape desired or breadsticks etc.  Let rise a couple of minutes before putting toppings on.

For breadsticks:  roll into sticks and brush with butter and garlic salt.  Let rise for about 15 minutes and then bake at 425 for 10 minutes, brushing with more butter/garlic halfway through.

This is a very soft but not sticky dough.  You could probably do this in the bread machine as well.

***I've substituted the oil with applesauce and the honey with agave. Tasted great!

"Let Food Be Thy Medicine"



 It's truly truly amazing of the abundance of nutrients veggies and fruits have to offer our bodies! Hippocrates was right on when he said, "Let food be thy medicine." I couldn't agree more! In today's society it's sad to me that we aren't taught MORE about good health from eating the RIGHT foods our bodies NEED to stay truly healthy and strong to avoid suffering from awful diseases, sicknesses, and cancers. From the ages of 19-21yrs. I suffered severely from not eating the right foods. I was really really sick, in a lot of pain everyday, and I couldn't figure out why and neither could my medical doctors. I went from this specialist to that specialist doing this procedure and that operation and prescribing lots of pills,which most of the time I never took. Then finally I stopped seeing medical doctors and started seeing holistic/naturopathic doctors and everything was fixed through strictly eating the right foods. I am so grateful for everything I've learned!

Tuna Mix Sandwich


In this "Tuna Mix" Sandwich there is canned tuna with finely julienned/diced carrots, bell peppers, cucumbers, and cooked sprouted beans. I also mixed in mayonnaise, organic dijon mustard, and some relish. I grilled them and served it with fresh mangoes, cucumbers, and sugar snap peas.

Baja Fish Tacos With Fresh Pico De Gallo

These fish tacos were very good. However, I don't think I'll ever fry the fish again! Not only because I almost started the kitchen on fire, but we really should avoid all fried foods. Nonetheless, it was still good. I loved all the fresh ingredients...pico de gallo, avocados, and cabbage. I also love the uncooked tortillas we buy at Costco and there are just a few ingredients. I do however need to work on my tortilla making skills, so we can have yummy homemade torillas. Try this recipe out here.
