So Good Chicken Salad Wraps



These Organic Chicken Salad Wraps were so so good!

This is one of my fast and easy meals to put together because I always have plenty of quart size ziplock bags filled with organic shredded dark chicken meat ready to use. I regularly buy two whole organic chickens that I cook, separate the white and dark meat, and then use the bones to make broth. It's much less expensive buying organic whole chickens and using EVERYTHING, than it is to buy organic meat and broth separately. It can be a bit of a process, but it's easy and so worth it!

Ingredients:

Organic Sir Kensington's Mayonnaise
Organic Dark Chicken Meat
Organic Green Grapes
Organic Celery
Lemon
S&P

So after adding everything in a big bowl you know what to do...

Mix it all together.
Add extra sea salt, pepper, or lemon to taste.
Top it onto your favorite lettuce.

I love butter lettuce for its softness or iceberg for its crispness.

Add some veggie sides...


And enjoy!

My hubby loves this Siracha Mayonnaise.

There are plenty of great ones right HERE that include Avocado Oil Mayo, Organic Mayo, their Classic Mayo, Chipotle Mayo, their Special Sauce, Dijonnaise, they also have "Fabanaise"a vegan mayor and from what I hear awesome ketchups and mustards. I bought this Siracha Mayo at my local Albertson's that costed $8. Yeah, expensive. However, thankfully I found it at my favorite online food/supplement company Vitacost. Yes!!! Maple Peanut Sesame Chicken


This meal was awesome!


Following a low fodmap diet can be oh so tricky and confusing, but I'm working on it and finding some good meals to make. Kate Scarlata is a well know Fodmap expert and she has plenty of great recipes. Including this one...


Maple Peanut Sesame Chicken

Ingredients
  • 1 pound chicken tenders (boneless, skinless)
  • 2 Tablespoons all natural peanut butter
  • 1 Tablespoon sesame oil
  • 3 Tablespoons reduced sodium tamari (soy sauce)
  • 1 Tablespoon sesame seeds
  • 1 teaspoon ground ginger
  • 1 1/2 Tablespoons pure maple syrup
Instructions
  1. Wash and pat dry chicken.
  2. In medium casserole dish, add peanut butter, sesame oil, soy sauce, sesame seeds, ginger and maple syrup whisking to blend.
  3. Add chicken and toss to coat with mixture.
  4. Cover and refrigerate for 30 minutes-several hours.
  5. Keep chicken in 'marinade' and place casserole uncovered in oven.
  6. Bake at 350 degrees Fahrenheit for 30 minutes or until chicken is cooked through. Serve over rice vermicelli noodles or baby salad greens.

    I made this meal to feed to our sister missionaries and they loved it. We have them over often and finally I made something that we could all eat. Yay!

    I also make my own dressing, which I pour a little bit of this and that in.
    Depending on how much you need make accordingly and let call it...

    Garlic Infused Ginger Dressing


    -Garlic Infused Olive Oil
    -Coconut Aminos
    -Sesame Oil
    -Squeezed Lemon
    -Ground Ginger
    -S&P

    I've also added some vinegar, just a little bit, and maple syrup to sweeten it up for guests. Infused oils are delicious a must do in cooking! Add the most of the olive oil, then just a bit less of coconut aminos or soy sauce, a little bit of sesame oil for that toasted sesame flavor, as little or as much fresh squeezed lemon as you like, prob less though, about a pinch of ground ginger, and salt and pepper to taste.

    We also had this oh so good...


    Which I was also able to enjoy for the first time in who knows how long!!

    Beans are used as my "pie weights" while baking.

Kale & Beet Spaghetti


I had some beets to use so they were thrown into our dinner.

Beets always give a nice and vibrant color that I love.

Also in the mix is kale, turkey meat, and fresh parmesan cheese.

Side salad topped with yummy organic strawberries.

Meal 4: Homemade Soup, Salad, & Breadsticks


Onward with the leftovers from the chicken drumsticks I used the bones to make bone broth. I never let my family through away their chicken drumsticks or thigh bones. I wash them off, put them in a freezer bag, and toss them into the freezer until I have enough bones to make broth.

As usual I boiled the bones for two days.
Directions here, don't let it scare you, it's so worth it.

On the final day I add some fresh herbs, chicken meat, sea salt.

About an hour before dinner I add onions &/or garlic.

Then I add the veggies celery, carrots, potatoes, kale, etc.

I also added our leftover quinoa.

Serve it with a tossed salad & freshly made bread sticks.

Pineapple Chicken Stir-fry


Another quick easy and yummy meal.
                • I cooked some chicken breasts
                • Chopped up the fresh pineapple
                • Cut up the cooked chicken & added the pineapple
                • Threw in some San-J Pad Thai Sauce
                • Sprinkled with sesame seeds

Side Salad:
                • Julienned carrots & cucumbers
                • Diced a tomato
                • Drizzle soy sauce & sesame oil
                • Squeezed lemon
                • Sprinkled with ground ginger
                • And mixed it all together 

I was lucky enough to get a quick pic with my phone.

Everyone was hungry and enjoyed. :)

Lunch Box To Go...

My lunch box to go from Health Choice Bar....green salad, papaya/ginger dressing, w/ no bean hummus and cucumber chips. I added my own grilled chicken to the mix.


Power Greens Salad...

Power Green Mix...spinach, kale, and chard. Topped with cucumbers, carrots, tomatoes, red onions, peas, grilled chicken, with fresh squeezed lime. All organic salad goodness!

Baking A Whole Chicken


I love to regularly bake a whole chicken. This time I got a special "Poultry Seasoning" pack filled with fresh rosemary, thyme, and oregano at our local grocery store and put most of the herbs inside the chicken with sliced lemons.

I cut some of the rind off the lemons, but not all of it. Then I added the rest of the herbs around the chicken.

This is the process I follow usually over a two day period...
  • Brine the raw chicken, to get the crispy skin. Get a big pot filled with water and add 1/4 to 1/2 cup of sea salt (enough to cover the chicken once immersed). Let it sit up to 4 hrs. or over night. I like to make sure the chicken is on its back in the water so it's in the salt water.
  • Then pour out the water and pat the chicken dry. Put it back in the pot, on it's belly, and let it sit in the refrigerator for a few more hours.
  • When I'm ready to bake the chicken I drizzle butter or oil over it and sprinkle sea salt, garlic powder, and black pepper and rub it all in.
  • Stuff inside the chicken all the herbs and sliced lemons.
  • Bake at 375 deg. for 1 hr. and 45 min.
  • Internal heat should be 165 deg. before done.
Nice and crispy skin.

We love serving it with roasted or steamed veggies, mashed cauliflower, and salad. The chicken is reflecting light from my bright orange shirt.
There is also plenty of meat for leftovers for the next few days.

Mashed Cauliflower Dinner


 
Cauliflower makes an awesome "mashed potatoes" dish. Potatoes are very starchy and turn into sugar quickly. So, mashed cauliflower is a great low carb, low glycemic, low calorie substitute for potatoes. 

Steam it until tender. Throw in some garlic and salt.

 Add butter if desired and mash it up or use a blender to puree it. I used my blender.

Garnish it with herbs or anything that sounds good!

Chicken Lime Salad


Organic greens, carrots, cucumbers, & celery. Shredded chicken from a whole chicken I baked.

With freshly squeezed lime juice.

These limes are oh so good!

They are straight off our friends tree!

After spending some time in Mexico I came to appreciate lemons and limes. At every meal they were placed on the table to go with our meals. Lemons and limes are also have amazing alkanizing  effects on our bodies.

Homemade Potato Salad

Have you ever read the ingredients list on store bought potato salad? Wow, this list is long and scary, well at least I think so. It has been awhile since we've enjoyed homemade 'tater salad. It's really simple too...

Boil
Diced Potatoes
Eggs

Chop up
Red Onions
Celery
Pickles
Boiled Eggs

Mix Together
 Everything above
Organic Mayo
Fresh squeezed lemon juice
 Dijon Mustard

It was really really good, especially after it sat in the fridge to chill!

Wild Alaskan Salmon Salad

I baked my Salmon in the oven with some coconut oil, spices...Real Salt, Garlic Powder, Black Pepper, Organic No-salt Spices blend. Then put it over my salad greens with parsley, tomatoes, yellow peppers, and red onions.

Lasagna, Asparagus, & Garden Salad

My husband and I got to make dinner together...I chopped up everything and he made the Lasagna.

Lasagna
Boil lasagna noodles
Cook meat in pan w/garlic & onions
Add spaghetti sauce to meat
Lay noodle, meat, and veggies every layer
Layer w/or w/out cheese
Bake in the oven
abt 375deg for 15-30min

Salad 
Organic Romain & Red Leaf
Fresh organic parsley 
Red onions
Organic carrots
Organic cucumber 
Tomatoes

Asparagus  
(Raw or Baked)
Raw just wash & eat!
Bake at abt 375 deg
Olive Oil
Sea Salt, Garlic Powder, & 
No-Salt Seasoning
For 5-10min

Butternut Broccoli Pasta & Salad

This dish is quick and easy! 

Boil the noodles, lightly steam the broccoli, add the sauce, and spices (Organic No Salt Seasoning, Cayenne Pepper, and Peppercorn.) With a yummy salad...lettuce greens, celery, carrots, and green peppers.

I used organic noodles mixed in with this gluten-free noodles. I really like the tru Roots brand that I find at Costco. I also like that it's from Italy. One of my Aunt's daughters has celiac disease and she said one of her friends also had celiacs and said that when her friend went to Italy she said she was just going to eat all the pasta she wanted! Come to find out none of the pasta there bothered her tummy! Our bodies genetics know that "ancient grains" or "ancient seeds" are clean, pure, and nutritious. Our bodies have become sensitive and intolerant to too many foods that man has altered, especially here in the United States. The US is one of the world's top leading producer of genetically modified crops.

This sauce is really good! 

I get a pack of two at Costco for around $6 or $7 (Costco always gets it on and off, so I stock up when I see it.) I saw it was at our local grocery store for just over $6 for one bottle.

Aparagus & Pasta Green Salad

Last night I went to my grandpa's 80th bday party! One of my Aunt's made an awesome pasta salad tomatoes, red onions, olives, raw asparagus, freshly diced garlic, whole wheat noodles (or some kind of gluten-free noodle), and a little bit of Italian dresing. I took some home and today for lunch mixed it in with my salad greens...organic red leaf and green leaf lettuce, organic parsley, and I can't leave out the fresh avocados! Wow, this was really good! Thanks Aunt Nita for the inspiration!

Lean Greens

Very simple salad...organic lettuce, parsley, and avocados! I also baked a whole organic chicken, took the meat off, and then boiled the chicken carcass to make a bone broth. Yum!

Can't forget the red onions. Hopefully, the parsley will out do the onion breath... Parsley cleanses your mouth and breath. It can take some time getting used to fresh parsley, but I love it now in my salads and juices.

Kneader's Large Green Avacado Salad

I love love this salad! It's super easy to make at home, but sometimes when I'm out an about, I enjoy this! The raspberry walnut vinaigrette dressing is really yummy! We had these the other night for an alkaline dinner. My husband and I have talked for a while about doing more things to alkaline our bodies, especially before we go to bed. In the last while I've noticed depending on what I eat for dinner (more acidic foods) I will wake up in the middle of the night and not be able to sleep because my tummy is upset and still digesting food. It's almost always healthy food that I've prepared from scratch, but my body is really sensitive. Over the weeks I've found that as I've eaten foods that are alkaline I do much better at night. Chicken Salad w/ Beans, Rice, and Pico

Last night we had some friends over and made some awesome burritos. This afternoon I made a salad with the leftovers. Last night I made Mexican Rice, fresh pico, and our friends brought marinaded chicken and Cafe Rio Dressing. We pan cooked raw tortilla's and then wrapped everything up! It was so so good! For the pico, I put in...tomatoes, onions, cilantro, jalapeno, black beans, avocados, and salt. All it was missing was the lime, but everything was super good!
