Homemade Bone Broth!


One of the Fish Fam's favorites is homemade brone broth!

It's really delicious and the health benefits are incredible.

Dr. Axe always has great health info...


Let me first say that this is really easy to make in the Instant Pot! Before I had an Instant Pot I would do it on the stove in a big pot and it took all day. It was lots of work. Now with the Instant Pot all I have to do is throw everything in the pot, push a button, and it's ready to go. I don't have to check on it and stay home and watch it all day. And because it cooks it at such high pressure so many more nutrients, vitamins, minerals, and goodness get extracted. 

You have to start with bones. Either beef or chicken. Or whichever animal bones you prefer. I buy these beef bones (pictured below) at our local grocery store. If they don't have them out just ask the butcher if he has any. You'll want about 2-3lbs.

To make chicken bone broth, I buy two whole chickens at Costco and cook them in my Instant Pot. Seperate the meat and bones. Freeze extra meat and bones until I have 2-3lbs of bones. 


Start off by roasting the bones in the oven at 400deg. for 30-40mins. turning half way.....


Roasting the bones gives the broth more flavor it helps give is a deeper and richer flavor from the caramelizing meat and marrow.


Toss them in the instant pot with lots of different veggies, herbs, spices, and lots of garlic and onions.

My go to veggies are carrots, celery, onions, and garlic. I also throw in any other veggies that I have laying around like cabbage, bok choy, bell peppers, squash, etc. I love adding fresh herbs like rosemary, parsley, bay leaves. Add some distilled or apple cider vinegar (it helps extract the nutrients better out of the bones). And don't forget the salt and pepper!


Next step add water. Make sure to only fill up the pot to the MAX line in the pot. 


Put the lid on and make sure your valve is closed properly to "sealed." Then push the pressure cook button to cook for the longest time it will let you. Push the - button to get to the max time faster. My newer Instant Pot IP-DUO60 7-in-1 Multi-Functional Pressure Cooker, 6Qt/1000W pot's max cooking time is 240 minutes. P.S. I'm so sad in our last move it got beat up. So sad! Being military we move alot and I keep all my nice kitchen appliance boxes for this very reason!! My kids didn't listen and didn't put it in the box. I'm just glad it still works!!

My older 6qt. duo pot the max cooking time is 120mins. When it's done wit the 120mins I will start over at 120mins. The longer you pressure cook this you can get more nutrients out of the bones. 

When done cooking let the pressure cooker do a NATURAL RELEASE. That means leave the lid on and don't touch it. Let it naturally depressurize. You'll know it's done when the little silver thing on top of the lid has fallen into the pot. If you do a quick release after it's done the broth it will squirt BOILING HOT liquid out of the valve all over the place! I let it go over about 40mins or even longer. Sometimes I leave it in there for a few hours beacuse it stays very hot. 


Once the pressure has gone down carefully remove the lid because the liquid will still be hot and steam will come out. I set up in my sink a big stainless steel bowl with these amazing stainless steel fine strainer I got from Bed Bath & Beyond. It all sets up nicely in my sink. I do not recommend usuing plastic bowls because the broth is so hot. I never put hot foods in plastic because the hot temperatures cause the toxic chemicals in plastic to leach into your foods. https://www.health.harvard.edu/staying-healthy/is-plastic-a-threat-to-your-health. I store all my hot foods in glass or stainless steel.


With hot pads carefully pour the conents of the pot into the strainer.


The strainer will catch all the veggies and bones.


Lift the strainer out and now check out your beautiful broth!...



Next step I take is to put it into the refridgerator so the fat can separate. You don't have to do this, but I don't have a gall blader and don't handle fat well at all. Plus there is another step that I take that the broth needs to be at cool temperatures for. 






Over night in the fridge the fat rises to the top and hardens.


Check it out! I break off the fat and store it in the freezer for other uses. 




You can't tell in the pictures but the broth turns into gel which is a good thing. That is the healthy collagen at work! Collagen does so many good things for your body. It helps create better joint, hair, nails, gut, and immune health just to name a few. Remember Dr. Axe's post I linked above? Read it!

To store it I like to freeze it and do two differnent things. Either put some into freezer bags and lay them flat on cookie sheets or use silicone molds like I have shown down below which I like better.



Then I get these awesome slicone molds (that you can find on Amazon) and pour the gelled broth into. Make sure to put the silicone molds on a cookie sheet because the molds are flimsy and need to be on a hard flat surface to go into the freezer.

Make a flat space in your freezer, which at different homes and with different freezers I've had to get creative with by stacking my frozen food items just right so they were level and what not. But now that we have our big stand up freezer I don't have to do that. Good luck!


After they are frozen I pot the broth pucks out of the silicone molds and into a freezer bag.


Then we can add them to different things in the amounts we need.

Coconut Sugar Banana Muffins


These Banana Muffins are now our favorite go to muffins. I've made them organic and am so glad they are fast and easy to whip up! I use this recipe from All Recipes, but have altered a few ingredients, so you can make to your liking :) I replaced the sugar with organic coconut sugar (and reduced it), I replaced the butter with organic coconut oil, and the flour with organic stone ground wheat. I also occasionally add nuts, coconut flakes, or healthy organic dark chocolate.

My family and friends have absolutely loved them!

Organic Coconut Sugar Banana Muffins

Ingredients
  • 1 1/2 cups    organic stone ground wheat
  • 1 tsp              baking powder (Rumford Aluminum Free Non-gmo)
  • 1 tsp              baking soda
  • 1 tsp              sea salt (Redmond Real Salt)
  • 1 cup             bananas, mashed (use this conversion calculator for bananas)
  • 1/2 cup         organic coconut palm sugar
  • 1 egg              preferably pasture raised
  • 1/3 cup          melted organic coconut oil

Directions 
  1. Pre-heat oven to 350 degrees. Put muffins liners into the muffin pan. (I used these unbleached/non-toxic muffin liners). Sift together the flour, baking powder, baking soda, and salt. Set aside. 
  2. Mix together the banana, coconut sugar, egg, and melted coconut oil in a large bowl. Pour in the dry ingredients until mixed smoothly. Add in your nuts and/or chocolate, coconut flakes if wanted. Then scoop batter into your muffin pan. (I love this disher/scooper that I have, find it here on amazon). 
  3. Bake in oven for 25-30 mins. Bake mini muffins for 10-15 mins.

Mix it all together, fill your muffin pans, put it in the oven, and enjoy the smell of baking banana bread. Yum!!


Enjoy it with a cup of milk or in our case a diary free coconut/rice milk combo!!!

They are perfect snacks to enjoy :)

Instant Pot: Chicken Taco Rice w/ Black Bean Salsa!


My kids wanted "Taco Rice" for dinner, an Okinawan thing, but I didn't have any ground beef or taco seasoning. What to do! I did have in the freezer homemade black bean salsa and organic chicken. Ok then, into the instant pot it goes...


Recipe for Black Bean Salsa

Two cut up tomatoes
1/4 of small onion
2 clove garlic
1/2 cup cilantro
Fresh squeezed lemon and lime juice
Jalapeno as much as you want
Sea salt

Put it all in a food processor and blend

Then add 1 cup of cooked black beans
Blend more, not too much.

*I also wanted to add corn. Next time!


After putting it all into the instant pot I put it onto Manuel 10mins. 


I then put rice into my IP#2.

A friend shared this recipe with me she found!...


My rice made in the IP before this recipe came out to wet. Not terrible, but compared to my rice on the stovetop it was too sticky and wet. 

This worked a lot better and didn't turn out too wet, but I think could've used a little tiny bit more water.


Then dinner was ready in an instant!! I didn't time the exact amount of time, but it was less than 30mins. I think 25mins. And that was from it being frozen.

It smelled so good and the chicken was cooked. These chicken breasts are thick and I've found since they are so thick they need at least 10min to cook through.


 It shredded so nicely!

I used two forks to shred it. 


Put it on a plate with some organic blue corn chips and insanely yummy cantaloupe that cost 1000 yen!!

Kids were happy happy happy with their Chicken Taco Rice!

***Tonight we had leftovers, just the meat. I put it into some organic tortillas with lettuce and salsa.

My oldest said..."Mom, this is like biting into a Taco Bell burrito, but it tastes so much better!" Awe, such a great compliment! And my youngest who is the pickiest happily wanted into the kitchen asking for another one saying, "These are so good mommy, I want another one!"

Instant Pot: Baby Back Ribs


If there is one thing I never imagined myself making it's ribs, especially in my pressure cooker! In the past IF we ever ate ribs it was the Costco pre-cooked packaged ribs WHEN they were on sale. Ha! But, my hubby doesn't like them, so it's been a really long time since him or the kids have had them. My little meat eating carnivores love bbq ribs, so they were so happy to have these!

I found this recipe for my Instant Pot: "The Greatest 'Fall off the Bone' Braised Baby Back Ribs" at Great Chow TV.

It's incredibly easy to make...


Ingredients: Apple juice, ACV (Apple Cider Vinegar), and BBQ Sauce (The Sauce Is Boss).

First you put 4 cups of the apple juice into the pot. Then about 1/8-1/4 cup AVC (in the video the guy says to pour it in for 2 seconds). The ACV will tenderize the meat and add flavor. 

After it's done carefully pull out the ribs (they fall apart easily)!

Then slather them with your favorite BBQ Sauce.

I need to find a good homemade BBQ sauce recipe!! But, for not The Sauce is Boss is always a good go to. 


I made these for the Missionaries who came over for dinner the other night. After blessing the food we uncovered the ribs and the Elders expression was priceless..."OH WOW!" 

They enjoyed them with some homemade potato salad, sweet potato fries, green salad, and organic mac  n' cheese. Not much was left. Lol!


The Fish Fam can't wait for more fall off the bone ribs!

There are more baby back rib recipes out there, which I'm looking forward to trying, especially without apple juice, but I think it's safe to say the apple juice/acv bath was a good one!

The Cheesecake Post!


I really wanted to make something extra special for my hubby's birthday!

His favorite is oreo anything so of course I had to make an Oreo Cheesecake.

You can't live in Japan and not love Pocky! Well at least that's how it is for the Fish Fam. So I was excited to make a Strawberry Pocky Cheesecake! Let me tell you these Okinawan strawberries are out of this world delicious. The Pocky is a pretzel stick dipped in a chocolate or yogurt of all sorts! Japanese love coming up with all kinds of flavors. I'm sure you can find them around in the States at your local Asian Grocery Store.

For you gingerbread lovers I think you'll love Martha Stewarts Holiday Gingerbread Cheesecake. Smells divine.

Strawberry Pocky Cheesecake


This Old Gal's New York Cheesecake is a classic and I was so excited to pair it with delicious Okinawa strawberries and oh so good Japanese Pocky. Yum Yum. 


I love love how it turned out! So beautiful.


I'm not lying when I say that these strawberries gown here in Okinawa are some of the best that I've ever had. They are the perfect sweetness, tenderness, and texture. They melt in your mouth and all you can say is wow! Not kidding.

All you have to do to get some is come to Okinawa, Japan! Ha!


When you eat out and buy cheesecake it can be pretty expensive for a slice. That's not the case when you make it yourself! I will say these strawberries made this the most expensive cheesecake of the three I made! Strawberries are in season right now and depending on where you buy them you pay $5-7 for the small pack above. The way Japanese grow and take pride in their fruits and veggies is awesome. They pick the best of the best and package it so nice and neat! Which end up being more expensive, but you look at it and want to buy it because it looks so lovely and good! Well, that's how it is for me anyways. Lol!


If you live in the States you can most likely find Pocky at your local Asian Grocery store. So go out and buy some and make that cheesecake!

Holiday Gingerbread Cheesecake


This is Martha Stewarts Holiday Gingerbread Cheesecake!

It holiday spices smell oh so good.

For my little 6" springform pan I had to cut her recipe in half and then into the Instant pot it went.


I found these perfect little gingerbread cookies at the grocery store. I did want top it with some whipped creme, but forgot to buy it. Nonetheless, it turned out and (hopefully) tasted great! I've passed it out to friends and they all say how delicious it is.

Cookies & Cream Cheesecake!



This Old Gal has the best pressure cooker cheesecake recipes. So of course I had to make my husband her Cookies N Crème Cheesecake!!

I've only made cheesecake in my Instant Pot and I'll tell you it's actually really easy! But you do have to  follow the directions closely for it to turn out right. Then before you know it in an instant you've got a beautiful cheesecake! 


Cooking time from when it's in the pot and I push the start button to when it's done cooking and I let the natural release pressure go for 15mins this cheesecake is done in an hour! After cooking you do have to let the cheesecake set up overnight in the refrigerator for at least 8 hrs. but longer is more ideal like 12hrs.


The next day pull it out of the springform pan and give a big shout out to yourself...you just made a beautiful cheesecake! YAY. 

Top it off with yummy Oreo's.

 Then take a step back to admire it!

Pressure Cooker Honey Sesame Chicken


This Pressure Cooker Honey Sesame Chicken looked pretty good so into the Instant Pot it went. The feedback from my oldest was...

"Mom, this is at the top of my favorites now! It's not the first, but it's at the top!"

Well then, there we go! However, my youngest refused to eat it because I added bean sprouts and little seeds. Oh no! Not bean sprouts or sesame seeds. Ha! Sorry buddy, its what's for dinner.

This was quick and easy to make along with a big pot of rice. I always have to make sure I make lots of rice! I really wish I was able to taste for myself, so I could give you feedback, but you'll just have to trust a kid's food critique. Which, I assure you he has good taste in food!

With the right ingredients you've got a healthy meal...


I try very hard to avoid GMO's (genetically modified organisms), unnecessary preservatives/additives, and over processed foods. So I like sticking with these non-gmo, organic, minimally processed food products. FYI, this honey is the BEST! I order mine from Vitacost.com (best price). Also, found at your local health food store and amazon.

This meal also turned into one of my lifesaving leftovers too...


On night number 2 we had the original meal with some steamed broccoli and corn. Then night number 3 there was still some left but not enough for everyone. So, I cut up onions, garlic, and a half a head of cabbage. Once cooked I added the rest of the rice and honey sesame chicken. Then whalla, dinner is served! Lifesaving Leftovers at its best.

Pressure Cooker New York Cheesecake!!


So. Cheesecake. Who doesn't love it?!

I would have never made cheesecake had I not joined an Instant Pot group on Facebook. Lots of people make all kinds of different cheesecakes in this pressure cooker and I just had to try it!

I used This Old Gal's New York Cheesecake recipe! So try it out. If all goes well and you don't end up over mixing the eggs everything will cook and set up just right and I'm super happy that mine came out!...


 The true test is if people like it. We had some friends over for dinner, so they got to decide! And they loved it. Them and my Fish Fam said over and over how good it was. Whew! Then my husband took the last of it to a family he went to visit after dinner. He came back saying how much they loved it and couldn't stop saying how good it was. I was glad to hear that because you all know cheesecake isn't something on my menu, so I didn't know how it tasted! It's definitely something my food intolerances will not tolerate. Too bad so sad! But honestly after seeing all the dairy and sugar that went into this thing, I'm not sure I could eat it even if I could eat it! Lol!! I'll stick to my raw paleo cheezcakes! 

If you want to make cheesecake in this pressure cooker you need to have a few specific things...

These two things are needed so the pan isn't submerged into the water.

*The green steamer is nice to use for making hard boiled eggs and I've used it for making banana bread and this cheesecake in the spring form pan, but because it's silicone and the springform pan fills the pot pretty good and us heavy from the bread or cheesecake the silicone rubs on the sides and makes it harder to pull it out. So I will try the trivet and her hand made foil sling next time!
