Pressure Cooker Honey Sesame Chicken

This Pressure Cooker Honey Sesame Chicken looked pretty good so into the Instant Pot it went. The feedback from my oldest was...

"Mom, this is at the top of my favorites now! It's not the first, but it's at the top!"

Well then, there we go! However, my youngest refused to eat it because I added bean sprouts and little seeds. Oh no! Not bean sprouts or sesame seeds. Ha! Sorry buddy, its what's for dinner.

This was quick and easy to make along with a big pot of rice. I always have to make sure I make lots of rice! I really wish I was able to taste for myself, so I could give you feedback, but you'll just have to trust a kid's food critique. Which, I assure you he has good taste in food!

With the right ingredients you've got a healthy meal...

I try very hard to avoid GMO's (genetically modified organisms), unnecessary preservatives/additives, and over processed foods. So I like sticking with these non-gmo, organic, minimally processed food products. FYI, this honey is the BEST! I order mine from Vitacost.com (best price). Also, found at your local health food store and amazon.

This meal also turned into one of my lifesaving leftovers too...

On night number 2 we had the original meal with some steamed broccoli and corn. Then night number 3 there was still some left but not enough for everyone. So, I cut up onions, garlic, and a half a head of cabbage. Once cooked I added the rest of the rice and honey sesame chicken. Then whalla, dinner is served! Lifesaving Leftovers at its best.

Flavorful Chicken Fajitas

These Chicken Fajitas were sure flavorful and tasty!
I love cooking with lots of spices.

I used this Flavorful Chicken Fajitas marinade recipe....
From Taste of Home

Ingredients
  • 4 Tablespoons canola oil, divided
  • 2-3 T lemon juice (I did lime)
  • 1 1/2 tsp seasoned salt
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp crushed red pepper flakes, optional

  • In a large resealable plastic bag, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Seal and turn to coat; refrigerate for 1-4 hours.
  • In a large skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm.
  • Discard marinade. In the same skillet, cook chicken over medium-high heat for 5-6 minutes or until no longer pink. Return pepper mixture to pan; heat through.
  • Spoon filling down the center of tortillas; fold in half. Serve with cheese, taco sauce, salsa, guacamole and sour cream. Yield: 6 servings.

  • *I used avocado oil and didn't get to marinade the chicken, but just let it sit in the sauce before I stir-fried it for a little bit. I chopped up some green and red peppers, onions, and mushrooms. When I stir-fired the veggies I sprinkled with some salt, pepper, cumin, and paprika. All we had in the fridge were some corn tortillas.

We topped the corn tortillas with...

     Rice
    The veggies
    Chicken
    Salsa

    And the boys devoured them!

    Enjoy!

    Pineapple Chicken Stir-fry

Another quick easy and yummy meal.
                  • I cooked some chicken breasts
                  • Chopped up the fresh pineapple
                  • Cut up the cooked chicken & added the pineapple
                  • Threw in some San-J Pad Thai Sauce
                  • Sprinkled with sesame seeds

    Side Salad:
                  • Julienned carrots & cucumbers
                  • Diced a tomato
                  • Drizzle soy sauce & sesame oil
                  • Squeezed lemon
                  • Sprinkled with ground ginger
                  • And mixed it all together

I was lucky enough to get a quick pic with my phone.

    Lunchtime...

It was getting close to lunch and my kids and I were hungry!
I opened up my fridge to see what I could quickly come up with....

    And it was good!

It's all about leftovers and creativity.
    See recipes below...

    Green Curry Basil Ono

I opened up my fridge to see what I had and I always says as long has you have veggies in the fridge and a plethora of spices and herbs the possibilities are endless!

I made up this dish for lunch quite quickly and it was so good!

I chopped up some garlic and onions.
I already had sliced green peppers in the fridge.
Added some S&P, Turmeric, dash of Cayenne
    Sauteed/Steamed them.
Boiled my Shiratake Noodles (yam noodle).
Tossed in my leftover Ono (fish).
Added some green curry paste & Chicken Stock.
    Added my noodles &
Fresh Thai Basil & Spearmint Leaves.
    Let it simmer.
    Drizzle Coconut Aminos over.

    Veggie Stir-Fry

We love making stir-fry dishes. I basically stir-fry any veggies I want. I add some water and soy sauce (I also use Bragg Sauce) then put a lid over it to let it steam for a couple minutes. I add eggs, a little more soy sauce, a little vinegar, sometimes just a tiny bit of sweetener (sugar, agave, etc.). Let it all cook and put it over rice!
