SO Delicious Pineapple Smoothie


This smoothie has been a Fish Fam favorite for a long time! 

It's super easy with only 2 ingredients and tastes oh so good!!!!


All you do is cut up one whole fresh pineapple and add some So Delicious Coconut Milk.

That's it! 

*Being that we are overseas I can't get "Organic SO Delicious Coconut Milk", but thankfully I found "Coconut Dream" at the commissary. You can find it next to the supplements on the top shelf above the Lara Bars and other energy bars.

Tips:
  • Make sure the pineapple is ripe. It will be brown and soft. If it's too soft it's really ripe, mostly likely over ripe.
  • The bottom of the pineapple will smell sweet. 
  • After it's ripe put the pineapple in the fridge to make it cold. 
  • Add 1/2 cup -1 cup of coconut milk. Just enough to get it blending. Too much milk takes away from the pineapple taste and makes it too liquidly.
  • Add ice if desired for a thicker, colder, crunchier smoothie. Just start with a little. 
  • Turn them into popsicles!!

I make this smoothie on a weekly basis and freeze it into popsicles. I love Ikeas little kids popsicle molds. Not too big, not too small. Perfect size....

You can also add some fresh sliced strawberries. Yum!

Pineapples are full of awesome vitamins and minerals and also have a powerful enzyme called Bromelian that has great health benefits! Bromelain helps with inflammation, swelling, & treating sore muscles. Bodybuilders certainly know how important it is to get bromelain into their bodies to recover. For me it's awesome to juice or eat fresh pineapples when I have sore calves and muscles from running, cycling, or ballet. Fresh pineapples also helps build strong bones and helps with indigestion and acid reflux. Can't go wrong when choosing a wholefood like pineapple, just go easy on it and don't eat too much at one time. Good facts here.

Pineapple Upside Down Cake!!!



Who doesn't love the classic Pineapple Upside Down Cake?!

This is one of my easy go to cakes, especially when providing meals for others. It's so vibrant and delicious! I use Duncan Hines Pineapple Supreme cake mix....


Super easy!


Ingredients

  • Topping:
  • 1/2 cup (1 stick) butter or margarine
  • 1 cup firmly packed brown sugar
  • 1 (20 oz) can pineapple slices
  • Maraschino cherries
  • Cake:
  • 1 pkg Duncan Hines® Moist Deluxe® Pineapple Supreme Cake Mix
  • 1 (3.4 oz) pkg vanilla instant pudding and pie filling
  • 4 large eggs
  • 1 cup water
  • 1/2 cup oil

Baking Instructions

  • Preheat oven to 350°F.
  • Melt butter. Remove from heat and pour in baking pan.*Aluminum cake pan works best.
  • Sprinkle with brown sugar over butter and evenly spread throughout the pan.
  • Arrange pineapple slices on top of mixture and place cherries in center of each pineapple; set aside.
  • Combine cake mix, eggs, water, oil and instant pudding in large bowl.
  • Beat with an electric mixer at medium speed for 2 minutes.
  • Pour batter evenly over fruit in skillet.
  • Bake 50 minutes or until toothpick inserted in center comes out clean.
  • Cool cake completely on wire rack. Invert onto serving plate.
  • Yum Yum!!!

Awesome Pineapple Cake!


Amy from She Wears Many Hats has a really great Pineapple Cake! We love pineapple everything over here and my kids loved this cake. Get the recipe here

This time I did use a boxed cake mix "Pineapple Supreme Moist Cake Mix." I added some vanilla pudding mix and instead of butter I used coconut oil. 

And I whipped up this yummy 7 Minute Frosting.


It smelled super good and tasted even better!

Christmas Fruit


We were assigned to bring some fruit to a Christmas party and you know those neat fancy fruit trees?

I wanted to make one of those, but it failed because I didn't have enough fruit!

Being that the one grocery store in our area never has a good selection and worse since it's winter the pickings were slim, oh so very slim.

I have these cute little mini cookie cutters and so I used them for the pineapple and made this fun fruit salad.

It was worth the $6 I paid for the 1lb of strawberries, I guess :)

Meal 1: Soy Glazed Ginger Salmon


My kids practically licked this meal off their plates.

Which says a lot because they don't usually like the fish dishes I cook.

Nothing a little soy sauce and brown sugar won't solve!

Soy Ginger Glazed Salmon

1 cup soy sauce
3/4 cup brown sugar
2 t fresh chopped ginger
2 T Mirin wine or sherry
(I used white wine vinegar or
you could use rice wine vinegar)

  • Preheat oven to 350 deg.
  • For the sauce bring all ingredients, except the salmon, to a boil in a saucepan. Stir just until sugar has dissolved, then reserve to cool. 
  • Marinate Salmon Steaks for at least 15 mins. 
  • Bake the salmon for 15 to 20 minutes. Salmon internal temp should be 145 deg.  
  • I use Organic non-gmo Soy Sauce.

Throw over rice, veggies, and we added our left over pineapples.

Yum!

Pineapple Chicken Stir-fry


Another quick easy and yummy meal.
                • I cooked some chicken breasts
                • Chopped up the fresh pineapple
                • Cut up the cooked chicken & added the pineapple
                • Threw in some San-J Pad Thai Sauce
                • Sprinkled with sesame seeds

Side Salad:
                • Julienned carrots & cucumbers
                • Diced a tomato
                • Drizzle soy sauce & sesame oil
                • Squeezed lemon
                • Sprinkled with ground ginger
                • And mixed it all together 

I was lucky enough to get a quick pic with my phone.

Everyone was hungry and enjoyed. :)

Pork & Pineapple Pizza

 My favorite TV show is Food Network. 
I've gotten so many good ideas, tips, help, & encouragement.
We've never had a TV with cable, but I'm sure grateful that while
we live here at my in-laws condo we have it!

This meal was inspired by a FN Show Sandra's Money Saving Meals.
 She made a pork roast & was using it for all kinds 
of dishes and one of them was pizza....

The kids were hungry and I though HEY! I have a big leftover bowl of  Kula Pork in the fridge
from a church even I went to that our Hawaiian Relief Society Pres. made. I also had a frozen cheese pizza in the fridge, and a Maui Fresh Pineapple was also sitting in the fridge ready to use!

With my little sous chef we spread the pork all over.
Chopped up some onions & pineapple.

 Baked it in 10min.
 Added some fresh cilantro.
And "Cucumber Chips"
Sprinkled w/ S&P love!
(Salt & Pepper)
 



Ohhh, it looked good and they happily enjoyed it!

Coconut Pineapple Smoothie


Just a few simple ingredients...


One whole freshly cut pineapple, 1/2-1 cup Unsweetened Coconut Milk, & ice if desired.


Oh yeah, super good!

From our smoothie leftovers we put the rest into the Popsicle holders and into the freezer.

 So so so good!

冰棒 Bing Bang

 My kids love to make "冰棒" Popsicles from our smoothies!

 Cherries, pineapple chunks, blackberries, strawberries, coconut ice cream, and water. These Popsicles are especially good to make for teething babies. They love it on their swollen gums.
