Thumbprint Jam Cookies

If you want a quick and simple cookie, yet delicious and buttery soft with a sweet surprise, these "Thumbprint Jam Cookies" are it!!!

I was shopping at the BX, here on our military base, and stopped to pick up our favorite "Wild Maine Blueberry Jam" and spotted a bunch of recipe cards and wanted to give these cookies a try. Super glad I did! For all my military friends I highly recommend all of Stonewall Kitchen's specialty jams and jellies that are sold at the BX. They are a bit pricier, but are on sale right now 2 for $11.

I made a couple changes...I added almond extract (did 1/2 almond and 1/2 vanilla), used less sugar, and didn't add the walnuts. *Also remember to leave your butter out overnight, so it's room temperature and that you should chill the dough for an hour.

These cookies are fun to make with your kids. My kids had fun pushing their little thumbs into the cookie dough and sneaking some dough and then dropping the jam into the holes. Because of my food sensitivities and intolerances I am unable to eat these cookies, so I really rely on others feedback and I'm so glad these turned out! That my family and friends have all said how incredibly yummy they are!

Now go and make your own and enjoy!!

Easter Egg Sugar Cookies

My husband and kids said these were the best sugar cookies ever!

The boys had too much fun decorating them with yummy frosting and sprinkles. We made a lot of these cookies to take out to our friends for easter.

They were easy to make and don't require any rolling, chilling, or a lot of effort in frosting or decorating. My mom made her sugar cookies with sour cream and they always got eaten right up all the time. She said one time she brought a lot to a church function and she felt a bad because the other cookie trays hardly got eaten and all of her's were gone! But they were so so so good!!!!!

So, I'm glad that I found an easy no rolling, no chilling sugar cookie recipe and although I can't eat these they seem nice and soft and fluffy.

Try out your own and enjoy!

Chocolate Avocado Cookies

These cookies may be one of the healthiest cookies you ever have!

They are fill with some of the best super foods!

Like...

Avocados, Raw Honey, Almond Flour, Dark Chocolate, Almond Butter, Eggs, and Cacao Powder.

That's it!

The Y.S. ECO Bee Farms Raw Honey is the best and certainly is "Liquid Gold!" It's very important to get good, clean, healthy, unrefined honey. Raw honey is unheated, unpasteurized, and unprocessed...which leaves the honey filled with is incredible vitamins, minerals, living enzymes, amino acids, and fatty acids!  Have you ever heard of honey being called natures anti-viral and antibiotic medicine?  My kids really like this raw honey, which I buy at any health food store like Wholefoods, Good Earth, Sprouts, Natural Grocer, Amazon, and Vitacost. Here it is at Amazon.

Blanched Almond Flour is great too. This brand is specifically great because I have found it works great for baking. Way way better than Bob Mills or other almond flours. Blanched means the nuts were soaked and the skins were taken off. Soaking or blanching nuts is the best way to get the most nutrients out of them. The skins contains phytates and for some people, especially with sensitive guts can be hard to digest and irritate the digestive tract. I buy this blanched almond flour at most costco's. It's a bit pricey. But such a great option.

A lot of people know dark chocolate is a superfood! Milk chocolate tastes a lot sweeter, but has lots and lots of sugar and ingredients that cancel out all the good stuff. Dark chocolate is filled with awesome minerals and antioxidants that do great things for your body like lower cholesterol, improve brain function, make skin healthy, and make you feel better! What more could you ask for?! So go for that healthy dark chocolate.

As for the Avocados did you know they contain more potassium than a banana?! They are filled with INCREDIBLY good healthy fats and they help rebuild the nervous system. Healthy fats are VITAL during pregnancy. The baby fetus NEEDS healthy fats to develop their central nervous system and brain. So important! And avocados are the best around! So enjoy them in these cookies and fresh on salads, in your guacamole, and so much more!! I love love avocados.

As for the almond butter and eggs...find and almond butter with one ingredient ALMONDS! You can make your own almond butter in your own food processor at home. You can also get fresh almond butter at most health food stores where you push a button and it is ground up and put into the container in your hand.

For the eggs, I always buy organic eggs. I would recommend ALWAYS buying organic and/or pastured eggs from your local farmer. They know what's up when it comes to producing healthy and happy chickens to make the best eggs.

So after blending everything up in your food processor scoop them up and drop them on a baking sheet and enjoy the smell of chocolate!

By Family Life Goals

Ingredients:

  • 2 ounces raw organic unsweetened chocolate melted in 1/2 tablespoon of coconut oil
  • 1/2 organic avocado
  • 2 tablespoons of unsalted organic almond butter
  • 1/4 cup honey
  • 1 organic egg and one organic egg white
  • 2 tablespoons organic cocoa or cacao powder
  • 1 1/2 tablespoons organic almond flour
Directions
1. Puree the avocado until it is very smooth.

2. Add all of the other ingredients one at a time and blend together until the batter is smooth.
3. Let the batter chill in the fridge for one hour.
4. Preheat your oven to 350 degrees.
5. Place the batter on a cooking sheet in the shape of your cookies. Place in the oven.
6. Bake for 15-17 minutes
7. Let cool for 5 minutes.
*The darker the chocolate like the one I used makes the cookies very rich. Also, I will add less cacao powder because it added to its richness. You can use any chocolate you prefer. Dark chocolate blend with some fruits or peppermint would be pretty awesome! You can also do another healthy sugar like maple syrup, coconut sugar, and unrefined molasses, even dates.
Enjoy!

Valentine Sweets & Treats < 3

There was plenty of Valentines baking and treat making over the week!

I'm pretty wiped out from all the Love Day Week events going on with my little ones.

Nonetheless, we made some yummy sweets and treats!

I make two different kinds of sugar cookies with butter or switch it for coconut oil.
The Fish Fam prefers the coconut sugar cookies.

Recipe for Coconut Sugar Cookies here and for the butter sugar cookies this recipe.

I made these heart shaped fruit pizzas for my youngest's Vday Party.
Yummy! Just make your sugar cookie, spread cool whip over the top, and then add your favorite sliced fruits. <3

These were for the older kids school teachers.

I used heart shaped silicone cupcake molders.

Then I put the Vday sprinkles and M&M's at the bottom. Then poured the melted chocolate on top. Which, I had to do some research on it is important to use the right type of chocolate to melt and use. There is a big difference that will give you very different results. Read here!

Homemade Fruit Snacks!
By Wellness Mama

Recipe here.

My kids sure loved these. Once you have all the right ingredients they are easy to make, but let me tell you it does take some practice to get it right. Mine failed the first time because come to find out I used fresh pineapple juice and just like she said it won't thicken. So I made them into popsicles. But, the second time they formed using pineapple juice from a can. Finally, but I still have much room for improvement.

We got some pretty sweet molds at amazon...heart shaped, dinos, and legos.

(I'll make a more detail post about this sometime soon.)

Cookies, Cookies, Cookies!

My kids of course loved the sprinkles we added!

Instead of chocolate chips I added special Halloween pumpkin spice M&M's.

The fam loved these ones!

I dropped some off to my next door neighbor and she said they were super good.

Last, but certainly not least...

Real-Deal Chocolate Chip Cookies

I got to enjoy these almond flour based cookies w/ Enjoy Life's dairy, nut, & soy free chocolate chips.

I'll tell ya it's been over a year since I've had a cookie, so these were awesome.

But, even one little cookie was too much and I had to just take a bite, but wow they are the real-deal!

I made all these cookies within one weekend and had so much that we froze some for later. Perfect!

Coconut Sugar Cookie Fruit Pizza

I made these mini fruit pizza cookies for my friends and they loved them!

I couldn't eat them because of the grains and sugar in them, so I'm very happy they passed the test!

Everyone said they were more than good and of course my family loved them too.

My mom used the make this delicious treat for us every once in a while and oh my goodness she makes the best sugar cookie dough and this was one of our family's favorite treats. I didn't use my mom's recipe. I found one on my All Recipes app that wasn't going to take long... Easy Sugar Cookie Recipe

I didn't have any butter, so I used coconut butter (Artisana Coconut Butter, which is my absolute favorite), but it didn't work. The dough was super crumbly and not sticking together. So, I cracked in another egg and added coconut oil in tablespoon by tablespoon until the dough started sticking together.  I usually use coconut oil instead of butter, but because the weather is so warm here in Hawaii, our coconut oil is always liquid. I needed softened coconut oil, so the cookies wouldn't be flat as a pancake!

I rolled them in balls and then mashed them and flattened them out in my hands. Which they were still a bit crumbly and would crack easily, but it worked!

Everyone said they were soft and delicious! Thank goodness!

I was going to make a coconut whip cream, but I didn't want to overdue it on the coconut and I was pressed for time. Luckily, thanks to Thanksgiving there was a can of whip cream in the fridge at my in-laws that all I had to do was shake the can and out it came. Then top it with apple-banana slices, strawberries, and kiwis and it looks beautiful!

Use your own favorite sugar cookie recipe and sub out butter with coconut oil for an extra good coconut-a-nutty taste and top it with your favorite fruits!

Enjoy!

Coconut Oatmeal Cookies

These Coconut Oatmeal Cookies were so yummy! I love following a health blog called Word of Wisdom Living. He posts some great healthy recipes. He calls these cookies...

Skip's Oatmeal Cookies

Ingredients:
  • 1 C butter (2 sticks), softened
  • 1 C turbinado sugar (or any raw sugar)
  • 2 eggs
  • 1 tsp vanilla
  • 1 C whole wheat flour (fresh ground is best)
  • ¼ C wheat bran (if you have it, otherwise use wheat germ, or just more flour)
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 C rolled oats (Old Fashioned, not instant oats)
  • 1 C chopped fresh walnuts, chopped
  • 2/3 C semisweet chocolate chips (we prefer the mini size and I divide the 12-oz package to get 3 batches)
Directions:
  1. Turn oven on to 350 F (after checking that your children haven’t left any toys inside).
  2. In a large bowl cream the butter and sugar; beat in two eggs and vanilla.
  3. In a smaller bowl blend dry ingredients (flours, salt, and baking soda).
  4. To the large bowl, stir in the dry ingredients, oats, walnuts, and chips.
  5. Place rounded tablespoons of dough on a baking pan and flatten with a fork.  (If you do this a lot, get one of those scoops with the device that pops the dough out.)
  6. Bake 12 minutes or so, cool, transfer from pan to wire grill for a few minutes to dry a bit.  We bag them into sandwich bags and freeze them for later, taking a bag out each day.  If there are kids around give them a cookie with an apple, orange or banana.

However, I changed it up a bit. Here is what I did...

Coconut Oatmeal Cookies

  • 1 C Organic Extra-Virgin Coconut Oil, softened
  • 1 C Organic Coconut Palm Sugar
  • 2 Organic Eggs
  • 1 tsp vanilla
  • 1 C Organic Whole Wheat Flour (stone ground)
  • 1/4 C Wheat Germ
  • 1 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 3 C Organic Old Fashioned Oats
  • 1 C Sliced Almonds
  • 1/4 C Unsweetened Coconut Flakes
  • 2/3 Cacao Chocolate Chips

Cream softened coconut oil and sugar together. Beat in eggs and vanilla.

 Dry ingredients.

I also added unsweetened coconut flakes.

 Mixing it all up!

Mash rolled cookie dough with a fork before putting in the oven.

All done and oh so good, especially with some fruit!

Quinoa/Coconut Chocolate Chip Cookies

This recipe is from one of my favorite cookbooks Quinoa 365: The Everyday Superfood. I made my own quinoa flour with my Vita-mix. I also substituted the butter with coconut oil. I really like using these Kirkland Chocolate Chips made with 51% Cacao.
