Bibimbap!!


We love bibimbap!!!!!! It's probably one of my most favorite meals ever. When we lived in China we lived above a Korean restaurant and I would go down every week to get a hot stone bibimbap bowl and my son loved the kimbap. So delicious!!!

The best part about having Korean Beef Bowls so often is that we can take the leftovers (when there are leftovers) to make bibimbap bowls! Thank goodness for Lifesaving Leftovers!



My kids made the rice, heated up the beef leftovers, peeled and julienned the carrots, fried some eggs, and my husband made the delicious Korean Spinach...https://www.thespruceeats.com/korean-seasoned-spinach-sigumchi-namul-recipe-2118874. One of my kids said don't forget the sesame seeds and Korean sesame seaweed. So so good!!!!


Way to go family!!

Chocolate Avocado Cookies


These cookies may be one of the healthiest cookies you ever have!

They are fill with some of the best super foods! 

Like...

Avocados, Raw Honey, Almond Flour, Dark Chocolate, Almond Butter, Eggs, and Cacao Powder. 

That's it!

The Y.S. ECO Bee Farms Raw Honey is the best and certainly is "Liquid Gold!" It's very important to get good, clean, healthy, unrefined honey. Raw honey is unheated, unpasteurized, and unprocessed...which leaves the honey filled with is incredible vitamins, minerals, living enzymes, amino acids, and fatty acids!  Have you ever heard of honey being called natures anti-viral and antibiotic medicine?  My kids really like this raw honey, which I buy at any health food store like Wholefoods, Good Earth, Sprouts, Natural Grocer, Amazon, and Vitacost. Here it is at Amazon.

Blanched Almond Flour is great too. This brand is specifically great because I have found it works great for baking. Way way better than Bob Mills or other almond flours. Blanched means the nuts were soaked and the skins were taken off. Soaking or blanching nuts is the best way to get the most nutrients out of them. The skins contains phytates and for some people, especially with sensitive guts can be hard to digest and irritate the digestive tract. I buy this blanched almond flour at most costco's. It's a bit pricey. But such a great option.

A lot of people know dark chocolate is a superfood! Milk chocolate tastes a lot sweeter, but has lots and lots of sugar and ingredients that cancel out all the good stuff. Dark chocolate is filled with awesome minerals and antioxidants that do great things for your body like lower cholesterol, improve brain function, make skin healthy, and make you feel better! What more could you ask for?! So go for that healthy dark chocolate.

As for the Avocados did you know they contain more potassium than a banana?! They are filled with INCREDIBLY good healthy fats and they help rebuild the nervous system. Healthy fats are VITAL during pregnancy. The baby fetus NEEDS healthy fats to develop their central nervous system and brain. So important! And avocados are the best around! So enjoy them in these cookies and fresh on salads, in your guacamole, and so much more!! I love love avocados.

As for the almond butter and eggs...find and almond butter with one ingredient ALMONDS! You can make your own almond butter in your own food processor at home. You can also get fresh almond butter at most health food stores where you push a button and it is ground up and put into the container in your hand. 

For the eggs, I always buy organic eggs. I would recommend ALWAYS buying organic and/or pastured eggs from your local farmer. They know what's up when it comes to producing healthy and happy chickens to make the best eggs. 


So after blending everything up in your food processor scoop them up and drop them on a baking sheet and enjoy the smell of chocolate!

Ingredients:

  • 2 ounces raw organic unsweetened chocolate melted in 1/2 tablespoon of coconut oil
  • 1/2 organic avocado
  • 2 tablespoons of unsalted organic almond butter
  • 1/4 cup honey
  • 1 organic egg and one organic egg white
  • 2 tablespoons organic cocoa or cacao powder
  • 1 1/2 tablespoons organic almond flour
Directions
1. Puree the avocado until it is very smooth.

2. Add all of the other ingredients one at a time and blend together until the batter is smooth.
3. Let the batter chill in the fridge for one hour.
4. Preheat your oven to 350 degrees.
5. Place the batter on a cooking sheet in the shape of your cookies. Place in the oven.
6. Bake for 15-17 minutes
7. Let cool for 5 minutes.
*The darker the chocolate like the one I used makes the cookies very rich. Also, I will add less cacao powder because it added to its richness. You can use any chocolate you prefer. Dark chocolate blend with some fruits or peppermint would be pretty awesome! You can also do another healthy sugar like maple syrup, coconut sugar, and unrefined molasses, even dates.

Navajo Breakfast Burritos


My Shimasani (Grandma) came for a visit and she made some Naaniskadi, Navajo Tortillas, for breakfast burritos!


All the kids gathered around her, just like I did with my other cousins when we were little, and she let them help her make the Naaniskadi.

I cooked the potatoes, eggs, and of course spam!


Top it off with some salsa because my kids like it with salsa and I had to get a picture fast before they were all gone!


Grandma's Naaniskadi is the best. I definitely can't get mine anywhere near hers yet!

Breakfast Scrambled Eggs


These are my favorite scrambled eggs to make!

-2-6 organic eggs
(depending on how many I'm feeding)
-Sm. amount rice/coconut/almond milk
-1tsp garlic infused olive oil
-1/2 tsp coconut aminos
(it's like soy sauce)
-Sea salt & pepper
- maybe some sesame oil
-chopped red/green/yellow bell peppers
-chopped cilantro

I first put some ghee or you can use butter to heat in pan. And then cooked the bell peppers.

Everything else I gently mix in a bowl and then add to the pan.

Good thing to remember when cooking eggs is...low and slow.

So, turn down the heat and cook 'em slow.

I put it over rice and might add a little bit more coconut aminos.

Banana Pancakes!

These Banana Pancakes are so so good!

They have two ingredients...

1 Banana
2 Eggs

That's it.

You mash up a banana, crack two eggs, mix 'em up, &
then cook them on the skillet.
*They are more delicate than regular flour pancakes
when cooking.

Super easy and so so yummy :)

Quinoa Pancakes and Eggs

This kind of breakfast makes my family happy! 

I ground my own quinoa flour in my vitamix dry-grains container, then found a recipe online (with no other grains), added chocolate chips, and served it with chicken sausage and eggs.

Homemade Potato Salad

Have you ever read the ingredients list on store bought potato salad? Wow, this list is long and scary, well at least I think so. It has been awhile since we've enjoyed homemade 'tater salad. It's really simple too...

Boil
Diced Potatoes
Eggs

Chop up
Red Onions
Celery
Pickles
Boiled Eggs

Mix Together
 Everything above
Organic Mayo
Fresh squeezed lemon juice
 Dijon Mustard

It was really really good, especially after it sat in the fridge to chill!

My breakfast's are much different than a year ago, which mostly consisted of some kind of oatmeal, fruit, and fresh juice. I've found out that my body needs a different type of fuel to last. I'm a protein type and therefore need more protein and fats to slow down how fast sugars breakdown and metabolize into energy. Before I was eating too many carbs, healthy carbs, but in the end my energy was so low and I didn't quite know why because I was eating really healthy foods. Now that I've added more healthy meats and fats and taken out grains, I've felt better, but still have more to go to feeling my most energetic self.

For breakfast I usually have some kind of mix of eggs, meat, veggie, and a shake filled with really good and healthy proteins and fats. The above pic is two boiled eggs w/ uncured ham, real salt, and pepper. The shake is 1/2 avocado, 1/2 of small apple banana, some fresh papays, a few frozen mango chunks, three dino kale leaves, almond milk, water, and hemp seeds.

 A boiled egg mixed with some of last nights dinner...Apple Chicken Sausage, with sauteed onions and garlic, baked potato chunks w/ Italian herb blend. And some raw fermented sauerkraut. I've been learning tons about how much our bodies and digestive system needs fermented foods to provide good healthy gut bacteria.

And this was my oldest's breakfast request...
Asparagus, eggs, sauerkraut, and "the seed bread".

Avocado Black Bean Stir-fry

This was fast and simple. My bell peppers were getting soft so I threw this together...

Fried onions and garlic, then added the organic...bell peppers, black beans, and eggs. After the eggs were done cooking I put it on a plate and added fresh avocados and some organic medium salsa. I was going to wrap it in a burrito, but all the tortillas were just cooked and all eaten up. As long as I have avocados I'm happy to eat it just like this!

Whole Wheat Waffles & Non-GMO

This picture and whole wheat waffle recipe is from Vitamix.com. I've used many recipes from their website to make things in my Vitamix and they have all turned out great!

 My mix of dry ingredients...

1 cup Organic Whole Wheat (Bob's Red Mill)
1 cup Organic Unbleached White Flour
1 tablespoon Baking Powder (Rumford Aluminum/GMO Free)
1 teaspoon Sea Salt

Then all the wet ingredients for the batter go straight into the blender...
  I used...

2 cups Unsweetened Almond Milk
2 Organic Eggs (egg substitute chia seeds, etc.)
2 tablespoon Raw Organic Honey (Honey down below is so so good!)
4 oz Organic Tofu (You ALWAYS want GMO free soy!)

Top Genetically Modified Foods...Corn and Soy are ALWAYS at the top of every list and also in just about every single piece of processed food you buy cereals, chips, popcorn, granola bars, crackers, baby foods, baby formula, pre-made mixes, animal feed, dairy, etc. Check out this list of more GMO foods. These kinds of foods are especially harmful to kids. The government is allowing so many more GMO foods. Would you ever think Sugar Beets (one variety of beets) to be a GMO food? Beets have the highest content of sugar of all vegetables, all natural, but when it's processed into refined sugar it loses all nutritional value and is just plain sugar and no bueno for our bodies. All of this GMO stuff is terrible, just terrible! The best way to avoid GMO foods/products is to make your own food and know what you are feeding your body. Also, a lot of health foods will definitely say right on their product "Non-GMO." I'm not saying you should never eat gmo's, but it should be very minimal.


Then take out the plug on top of the lid and put the dry ingredients into the batter and let it mix.


Put some frozen or fresh berries on top and enjoyed this nice & simple meal!

Guac Egg Salad Sandwich

I like to make our egg salad sandwiches a specific way...

1. Boil organic eggs, so the yolks are soft and not cooked hard. 10-12mins. You can do longer. Check out how to "Make Perfect Hard Boiled Eggs".
2. Dump hot water and then run cold cold water over the hard boiled eggs and let them sit in cold water for a few minutes. This makes the hard shell peel off very easily.
3. Break away the solid whites and take out the yolks and put them in different bowls.
3. The make a spread I use 1/2 to a 1/4 of the yolk, from the batch of boiled eggs, to mix either with all or one of these things...avocados, hummus, mayonnaise, and/or grapeseed oil veganaise. The above pic was a mixture of the yolk, avocados, and veganaise. The yolk is where all the cholesterol is found, so that is why I don't use all the egg yolks.
4. Next I slice up the solid egg whites into pieces. 
5. Then mix the whites into the creamy spread mixture.

I love to add cayenne and/or black pepper. You can also throw a bunch of other things in like julienne carrots or cucumbers, sprouts, tomatoes, lettuce, etc. This is one of my favorite sandwiches!

Mesquite Veggie Breakfast Burritos

I made these for breakfast this morning and they were good! I had leftover chopped up veggies from the pizza toppings, so I came up with this. Veggies: Onions, olives, red & green bell peppers, and zucchini, awe should have added fresh avacados. I cooked them and then added organic eggs and a mesquite seasoning I have from Costco. Serve with raw tortillas heated up in the pan!

I also added salsa. Sorry for the unfocused pics I was too hungry to mess with the aperture and light settings.
