Easy Homemade Sandwich Bread!

"Keep calm and bake on!"

That's what we did during Typhoon Trami and there's nothing like the smell of fresh homemade bread in the home...can you smell it now? Happiness!

A lot of work went into this lovely loaf of bread. I mixed all the ingredients together and then my youngest got to work kneading it. He did a great job! I usually put it in my kitchen aid and let that do the work, but the bread came out dense. My 7yr. old wanted to help knead it so I should him how and he ended up giving it a few too many punches and then folding. It turned out to be a great method!!

It wore him out a little bit and he had fun! Plus the dough came out nice and soft and rose perfectly!!

So glad my kids love to help out in the kitchen. I certainly love teaching them the importance of cooking!!

They love love this bread and I love that they love it!

Happiness is definitely homemade!

I've been using King Arthur's Bread Flour and it's been great....

*This recipe is for a bread machine. I don't have a bread machine, so I do it a little differently. If you have a bread machine then add it all together in the machine and press start. If you don't follow my directions.

Easy Sandwich Bread

Ingredients:
  • 1 cup lukewarm water
  • 1/3 cup lukewarm milk
  • 3 tbsp. butter
  • 3 3/4 cup bread flour
  • 3 tbsp. sugar
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. active dry yeast or instant yeast

Directions:
  • Put lukewarm water in your mixing bowl and add sugar and instant yeast. Let it rest for 5mins.
  • It should be foamy and bubbly, add the rest of the ingredients and mix together.
  • Knead it for 10-12mins until nice and soft.
  • Oil a loaf pan and shape the dough for the pan.
  • Let it rise for 1 hr. and don't forget to set your oven at 350 degrees.
For the small 1lb. loaf use this...
  • 2/3 cup lukewarm water
  • 1/4 lukewarm milk
  • 2 T butter or I like avocado oil
  • 2 1/2 cups bread flour
  • 5 tsp. sugar
  • 1 1/4 tsp. salt
  • 1tsp. active dry yeast or instant yeast
  • I let it rise for 2.5 hrs. I turn the oven on about the last 30 mins of the rising time to 350 deg. and then bake for 33 mins in a glass baking dish.
  • After it's done rising put into the oven for 40-45mins until golden brown.....

Let it cool and enjoy with some fresh butter and smile :)

Coconut Banana Banana Bread

Ingredients

2 cups organic flour (white and/or wheat)
1 tsp. baking soda
1/4 salt
1/2 cup coconut oil (softened)
1/2-3/4 cup coconut sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
1/4 water

*Add ins: 1/4-1/3 cup Chocolate Chips (I like Enjoy Life dairy, nut, & soy free), 1/2-1 cup Chopped walnuts or pecans.

*Sometimes I add in a little bit of brown sugar with the coconut sugar.

*When using coconut oil it needs to be softened. It's melting point is 76 deg. If it's solid I spoon it out the into a bowl and mash it to soften it and then measure desired amount.

*The water makes them more moist.

Directions

1- Preheat oven to 350 deg. F. and if using a loaf pan, lightly oil and dust with flour. If using a muffin pan I love these "If You Care" baking cups.

2- Mix flour, baking soda, and salt in a large bowl. In a separate bowl cream together coconut oil and coconut sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture. Add in your chocolate chips and/or nuts if wanted. Pour batter into prepared loaf pan or scoop into muffin cups. If baking with wheat let it rest for 10mins.

3- Bake for 60-65mins for 9x5 loaf pan or 18-20mins for muffin pans.

*A good tip when baking with wheat is to let the batter sit and hydrate for 10 mins. The wheat is more course and this give it some time to absorb the liquid and soften the bran and germ of the wheat. Also, it may need more cooking time.

For muffins I highly suggest getting this Vollrath Disher!! I love these scoopers. They make it so much easier to dish out the right and consistant amount of batter for muffins, cookies, meat balls, etc. For the pictured muffin I used a yellow size 20 disher (1 5/8oz or 3.25Tbs). If you want them a little bigger I'd suggest going with the blue size 16 disher (2oz or 4Tbs). If I want a higher rounded muffin I will do a heaping scoop of batter with my yellow #20 disher.

Enjoy!

Halloweenies and Pesto Pasta

These simple and fun Yummy Mummies aka Halloweenies are one of my kids favorite things to make and eat during Halloween!!

I make the dough from scratch. I always use Six Sisters "Homemade Pizza Factory Breadsticks" recipe. Super easy, but does take a little bit of time due to rising.

1½ cups warm water
2 Tbsp. sugar
1 Tbsp. yeast

Let that sit for 5 minutes. Then add:
3½ cups flour
1 tsp Salt

Mix until smooth then let raise for 10 minutes. Roll out dough into a large square on a floured surface. Brush with melted (real) butter mixed with garlic and then sprinkle with kosher salt. Fold in half and cut into 1 inch strips. Twist and place on a cooking sheet. Let sit for 15 to 20 minutes to raise. Bake at 400 degrees for 20 minutes or until golden brown. Immediately after baking, brush with more garlic butter and sprinkle with kosher salt and grated parmesan cheese.
*I always end up needing a little big more flour so it's not sticky. For these Halloweenies I didn't do any garlic or parmesan cheese, but I think I should've. And I usually add olives for the eyes, but didn't have any, so raisins it was. These have always been the best breadsticks ever, or in this case Halloweenies ever!

**And if you want paleo style Nom Nom Paleo has got you covered click here!
I served them with some homemade pesto over Barilla tri-colored spiral noodles and some very cute Charly Brown Halloween pasta....

My kids love the homemade basil pesto that I make. It's something that I can't eat because of the garlic and cheese in it, but oh my goodness it smells so good. Basil makes everything smell so wonderful!

Basil Pesto is super easy to through together and no need to follow a recipe,
but here is a recipe to follow:

2 cups Basil
1/2cup Parmasean Cheese
1/2cup extra-virgin olive oil
1/3cup pine nuts
3 garlic cloves
Salt and pepper to taste

Put it all in a food processor and blend.

They said, "This is the best dinner ever mama! We love Halloweenies because mummies are so yummy! And your pesto noodles are always the BEST!!"

Nanniskadii w/ Turkey Soup

Nanniskadii is a Navajo food staple growing up we loved it when our mom made Nanniskadii or Frybread for dinner!

Nanniskadii is Navajo for tortilla and is so good. Just some flour, baking powder, salt, warm water, and SKILL is all it takes, yes, I have to emphasis SKILL.
I'm still working on mine.

It was supposed to compliment our Stew, but I didn't have any stew meat and our local grocery store is closed on Monday's. So, upon searching my freezer I found the last of our leftover Thanksgiving Turkey meat. Well, that needed to be used up!

In my awesome Instant Pot pressure cooker I made the broth from grass-fed beef bones, which I purchase at Wholefoods from the meat department. Then chopped up veggies...

Bay Leaves
Onions
Garlic
Carrots
Celery
Potatoes
Zucchini
Stewed Tomatoes
Salt
Pepper

It was enjoyed!

Banana Pecan Bread

This is Danielle Walker's Banana Bread (Paleo) from her Against All Grain cookbook.

It is super good!

You'll have to get the recipe from her book, but I did switch out a few ingredients for my dietary needs...instead of honey I subbed with maple syrup, I didn't add any vanilla extract (I don't like the flavor), instead of AVC I used white vinegar, and instead of canned coconut milk I subbed with Unsweetened Coconut Milk, I also added chopped pecans (Yum!). To get the best results with this bread Danielle highly suggests only using Honeyville Blanched Almond Flour. Using other brands like Bob's Red Mill results in "overly moist products that will sind in the center or have a grainy texture." Which, Paleo breads do come out more moist and soggy, but you definitely want to avoid it being even more so, which from experience she is totally right. I buy this almond flour at Costco for $22, which yes, is very expensive, but it's what I can eat.

After I baked it and let it cool I put it in a ziplock bag and into the fridge.

The next day it always tastes a lot tastier :)

Enjoy!

Jack-O-Lantern Pizza's

For Halloween we made Jack-O-Lantern Pizza's
w/ some fangs!

My kids loved 'em!

Happy Halloween!!

We also had a little Halloween party for the little guys that don't go to school and get to enjoy all the class parties. I made the veggie tray and friends brought over other yummy Halloween treats!

We also had Hot Dog Mummies, straight out of their tombs!

Fun creations and memories!

Brussel Sprouts & Sausage

While we were food shopping I asked my should we get Brussel Sprouts?

My oldest exclaimed, "YES! I love Brussel Sprouts."

Haha, there was a lady standing next to us that looked over with a surprised look.

I threw together this dish by chopping up...

Fresh Garlic, minced
Onions, diced
Potatoes, peeled and cubed
Brussel Sprouts, bottoms cut off
and cut in half

I started to pre cook the sausage in a pan on the stove, but didn't cook all the way.

I put everything in a big bowl and added sea salt (I like Redmonds), peppercorn (from the pepper grinder), and Italian Herb Seasoning, and then drizzled plenty plenty of oil all over and mixed it all together.

Preheat oven 400 deg or so for 30-40 mins.

While the food was baking I rinsed and washed the quinoa and cooked in on the stovetop.

To get the Quinoa to turn out good I always add 2 cups water to 1 cup quinoa on high heat and bring it to boil, then once it starts boiling, immediately turn it down to med-low, a tiny bit on the low side put a lid on it and set the timer for 15 mins. Take the lid of and stir it around a bit. It should come out really great and fluffy.

I also made some yummy cornbread.

Recipe here. My hubby says it's too moist and to try less liquid.
Instead of butter milk, we cow milk alternative.
Coconut, Rice, or Soy Milk. The coconut and soy are thicker.

I like that this recipe has very little sugar 1T, but I added honey.
We buy this super good kine for many healthy reasons.

My kids like to go and dip their little finger in the jar all the time!

I love that the kitchen is the heart of our home and that...

:) Happy Tummies = A Happy Heart <3

"Even Better Than The Real Kind" Banana Bread

This Banana Bread didn't come out like any others I've made.

I didn't add any of the refined sugar. Instead, added one more banana and a little maple syrup abt 1/8c.

It was very moist and a little bit soggy in the middle.
Probably because there is yogurt in there too.

After my kids got home from school I asked if they wanted some and of course they did, but I told them it's not like other b bread I've made, it might taste different, and it's soggy in the middle.

After the first bite, the reply I got was, "Ummm, this is the best banana bread, it's even better than the read kind you make!"

Lol. Oh, the things kids say!

Coming out of the oven it looked and smelled good though.

Recipe from: So Good Blog

Healthy Maple Glazed Pumpkin Muffins

I was looking for a pumpkin muffin recipe that looked good...

These Healthy Maple Glazed Pumpkin Muffins via Pinch of Yum looked great!

I like how she puts it...

"This recipe is basically five simple things: mix the wet, mix the dry, mix them both together, bake, and glaze. I love recipes that can be explained in one sentence."

And Healthy because...

This “healthy” version follows a basic rule of halves.
  • Half the sugar of the original, subbing real maple syrup for some but not all because DANG girl that stuff is expensive.
  • Half of the flour swapped out for whole wheat. Fiber. Healthy. Simple as dat.
  • Half of the total oil, using olive oil. Guess what? NO TASTE. I served it at a brunch with friends and they were all surprised when I mentioned the olive oil. And ironically my other friend who had brought pumpkin bread also made hers with olive oil. This is one where you can get away with that sort of healthy debauchery.
  • Half of the glaze. NOT! Hello? The maple glaze is the bedazzling crown of this puffy little muffin.
Author:
Serves: 16

Ingredients
For the Muffins
  • 2 cups whole wheat flour
  • 1½ cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon each cloves, cinnamon, and nutmeg
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 cups pumpkin puree
  • ½ cup olive oil
  • ¼ cup real maple syrup
  • 3 tablespoons milk
  • 3 eggs
For the Glaze
  • 2 tablespoons butter
  • 1¼ cups powdered sugar
  • 1 teaspoons vanilla
  • 1 tbs. maple syrup
  • 1-2 tablespoons water
Instructions
  1. Preheat the oven to 350 F. Mix the dry ingredients (flours, baking soda, baking powder, cloves, cinnamon, nutmeg, salt, and sugar). In a separate bowl, mix the wet ingredients (pumpkin, oil, maple syrup, milk, and eggs).
  2. Combine the dry and wet ingredients in a large mixing bowl, stirring until just combined. Fill each muffin tin almost to the top with a scoop of batter - I like to use an old fashioned ice cream scoop with the little thumb press to get a nice rounded top.
  3. Bake for 20 minutes or until tops are puffy and spring back when you press them. Remove from the muffin pan and let cool before glazing.
  4. For the glaze, melt butter in saucepan. Add powdered sugar and vanilla - it will be thick and sticky. Stir in maple syrup. Add water until desired consistency is reached.
*Her trick to getting perfect domed muffin tops is using a disher aka ice cream scooper with the thumb button.

*I also used coconut oil instead of olive oil.

Almond Flour Zucchini Bread

Against All Grain has some amazing Paleo recipes!

This Almond Flour Zucchini Bread is something that I can enjoy, yay!

I have found baking with almond flour can be difficult because the inside is usually moist and soggy. Danielle from Against All Grains suggests that the type of Almond Flour you use matters greatly..."You may not think the type of almond flour you use matters, but you will notice a huge difference once you try it. You breads will rise better and you will no longer have slightly soggy muffins. The consistency is the closest to white flour grain-free can get!" She recommends using Honeyville Blanched Almond Flour. From my experiences now I agree. Thankfully, our Costco carries this brand. It was $17 for a 3lb bag but, now it's $19.

This bread is also SCD, Specific Carbohydrate Diet. Definition from, www.scdlifestyle.com..."The Specific Carbohydrate Diet (SCD) is a group of foods which are grain-free, sugar-free, starch-free, and unprocessed.  While removing many foods that are toxic and digestively harmful the diet remains natural, extremely nourishing and representative of what our ancestors ate." A diet which I'll be following more shortly in the future to improve the health of my digestive system.

Meal 4: Homemade Soup, Salad, & Breadsticks

Onward with the leftovers from the chicken drumsticks I used the bones to make bone broth. I never let my family through away their chicken drumsticks or thigh bones. I wash them off, put them in a freezer bag, and toss them into the freezer until I have enough bones to make broth.

As usual I boiled the bones for two days.
Directions here, don't let it scare you, it's so worth it.

On the final day I add some fresh herbs, chicken meat, sea salt.

About an hour before dinner I add onions &/or garlic.

Then I add the veggies celery, carrots, potatoes, kale, etc.

I also added our leftover quinoa.

Serve it with a tossed salad & freshly made bread sticks.
Recipe here.

Nothing better than homemade Chicken Soup, salad, & bread sticks!

Avocado & Eggs

This is a great snack or lunch. Whole wheat honey bread, organic boiled eggs, avocados, sprinkled with Himalayan Pink Salt, pepper, and cayenne pepper.

Chicken Soup

I like making my own bone broth or chicken stock from a whole organic chicken. I bake it, take the meat off, and then boil the carcass for the whole day with garlic, onions, and celery. Then I have lots of chicken meat for salad's, soups, sandwiches, and curries!

Check out Wellness Mama Bone Broth Benefits, "Homemade bone broth is an incredibly nutrient dense food and it is also very inexpensive to make. Broth is packed with minerals, gut-soothing gelatin and amino acids proline and glycine. Broth’s natural gelatin content helps sooth the digestive track and improve nutrient absorption."

For more good info check out her "How to make bone broth" tutorial and explanation of why it's so good and healthy for us to consume.

After letting the broth boil for a day, the next day I pulled it out of the fridge and then added potatoes, carrots, onions, some of the chicken meat, and rice. It was really fast, simple, and good! Especially, with some toasted Rosemary Bread.

Guac Egg Salad Sandwich

I like to make our egg salad sandwiches a specific way...

1. Boil organic eggs, so the yolks are soft and not cooked hard. 10-12mins. You can do longer. Check out how to "Make Perfect Hard Boiled Eggs".
2. Dump hot water and then run cold cold water over the hard boiled eggs and let them sit in cold water for a few minutes. This makes the hard shell peel off very easily.
3. Break away the solid whites and take out the yolks and put them in different bowls.
3. The make a spread I use 1/2 to a 1/4 of the yolk, from the batch of boiled eggs, to mix either with all or one of these things...avocados, hummus, mayonnaise, and/or grapeseed oil veganaise. The above pic was a mixture of the yolk, avocados, and veganaise. The yolk is where all the cholesterol is found, so that is why I don't use all the egg yolks.
4. Next I slice up the solid egg whites into pieces.
5. Then mix the whites into the creamy spread mixture.

I love to add cayenne and/or black pepper. You can also throw a bunch of other things in like julienne carrots or cucumbers, sprouts, tomatoes, lettuce, etc. This is one of my favorite sandwiches!

Homemade Superhero Pizza's!

For our little superhero's birthday party we made homemade superhero pizza! Recipe I use below. We usually make pizza's with half no cheese and the other half very little cheese. these ones we loaded it on to get better color. The kids loved them! The Batman pizza was the only veggie, ha, with olives only.

Basic Pizza Dough

1 tablespoon active dry yeast
1 cup warm water (105-115 degrees)
2 1/2 tablespoons applesauce
1 tablespoon agave
1/4 teaspoon sea salt
3 cups organic white flour

*I use applesauce in place of oil, agave in place of honey or sugar, sea salt instead of table salt, and organic flour instead of regular white flour.

1.  Mix the yeast and water in a small bowl, cover, and let stand until foamy, 5 to 10 minutes.   (Add a teaspoon or less of sugar if you'd like, sugar make the yeast more lively.)
2.  Mix the applesauce, agave, sea salt, and yeast mixture in a large mixing bowl.  If using a food processor, add 1 cup of flour at a time, up to 3 cups, mixing well after each addition.  You may have to stir in the third cup of flour by hand, depending on your machine.  Or mix in all 3 cups of flour by hand with a wooden spoon.
If the dough seems too wet, mix in more flour, 1/4 cup at a time until the dough is soft.  Turn the dough onto a floured surface and knead in more flour, 1/4 cup at a time, until the dough is moderately stiff and somewhat firm to the touch, about 6 minutes. (I've noticed that making the dough with applesauce in place of oil makes the dough more flaky, but nonetheless always turns out fine and tastes great. If it's too flaky add a little more applesauce next time.)
3.  Lightly grease pizza pan with oil and roll into shape desired or breadsticks etc.  Let rise a couple of minutes before putting toppings on. (Letting it rise always makes the applesauce dough easier to roll out.)

For bread sticks:  roll into sticks and brush with butter and garlic salt.  Let rise for about 15 minutes and then bake at 425 for 10 minutes, brushing with more butter/garlic halfway through.

It's a soft but not sticky dough.  It's really fast and easy!

Here is the adult's pizza...

My slice with avocados, yum. A friend puts fresh ripe avocados on her pizza. So glad I picked that up!

Butternut & Potato Soup

I wanted to make a yummy potato soup and found this recipe here. I kind of followed it and made this delicious soup with Rosemary Olive Oil bread (store bought)!

I started by boiling enough water to cover all the potatoes. I chopped up a lot of red onions and garlic and let them soften in the pot while it boiled. I chopped up about 8-10 potatoes, 5 organic celery sticks (leaves included), cilantro,  & dino kale. I also chopped up in quarters 4 Aidells Chicken & Apple Smoked Chicken Sausages. Luckily, I bought pre-chopped butternut squash. I put all the veggies in, except the leafy greens. I add smoked paprika, pepper, and salt. I also add more liquid vegetable broth and turn it down med heat. When the veggies are getting soft (about 8 or so mins) I add in almond milk, the leafy greens, chicken sausage (comes fully cooked), and turn it down to low. All the chopping takes the most time, but that's what I love most about making dinner the chopping is like a stress reliever for me. Good thing I enjoy it.

I prefer to not buy non-organic meat, it doesn't mean we won't eat it because you can't always control what you eat outside of your home. The meals I make with meat is mainly organic. Organic meat is expensive, but we are able to afford it because we don't eat very much meat at all and buying it in bulk at Costco you can get the most for your money. We know its really important to include more plant based foods that have lots of protein, fiber, omega fatty acids, iron, folate, etc. Instead of eating animal meats and animal based foods. We really do like sausage, but I haven't seen organic pork anywhere around here, so these chicken sausages, although not organic, has no msg, nitrates, or added hormones and that's awesome! Like the Chinese say meat should be for flavoring and not the main course!

Egg Salad Sandwich & Coconut Tapioca

There is a local health food store here in Maui called Alive & Well. They have a deli with freshly made salads, sandwiches, sushi, desserts, juice, smoothies, etc. Offering raw, organic foods, and local produce. I've eaten a lot of different salads from there that taste delicious and this egg salad sandwich was amazing!

This (vegan) coconut tapioca was super good as well! Gotta learn how to make this at home.

 So many good choices.

Next time I will try this...yumm!

Black Bean Burger

I get these Chipotle Black Bean Burgers at Costco. They are really good, but have a lot of ingredients. We need to find a good homemade black bean burger recipe. If you know of one let me know, thanks! I put organic hummus and dijon mustard on multigrain rounds. For the toppings I put raw zucchini, baby portabella mushrooms, red onions, and spring mix salad greens. Yum!
