Meatball Soup


This is a life saving leftover’s meal!

I make a lot of bone broth from chicken backs that I get at Wholefoods. After cooking it I let it cool overnight in the fridge and then put it in freezer bags and store in the freezer and get it out when need to use it. Easy peezy!

After heating up the frozen chicken broth I add my cut up veggies...carrots, zucchini, and yellow squash, which most of the time these veggies are pre-steamed or cut up and in a container already in the fridge. I make sure my rice is ready to go as well.

***Always make sure to clean your rice before you cook it!!! After measuring the rice put it in the pot and I like using clean purified water from our water filter to clean the rice over and over by grabbing it with my hands and rubbing it and then dumping the water out carefully to not let the rice dump out. Seriously, repeat this over and over until the water runs clear or is close to it. Rice naturally has arsenic, its in the soil, it can be reduced by cleaning the rice very well. Also, this is what Chinese people do...they always clean their rice!

Then I also used my leftover meatball to add in.
Add in sea salt, pepper, other spices to taste.

*** I also just learned that to make broths low fodmap you have to be careful about what types of bones you use. If it's from bones that still have lots of cartilage and remains it still has, I think, a good amount of polyols that will irritate your gut. It did mine, but it took awhile for me to finally discover it. So, for low fodmap Dr. Allison Siebecker suggests making bone broth that is from purely bones.

Almond Flour Zucchini Bread



Against All Grain has some amazing Paleo recipes!

This Almond Flour Zucchini Bread is something that I can enjoy, yay!

I have found baking with almond flour can be difficult because the inside is usually moist and soggy. Danielle from Against All Grains suggests that the type of Almond Flour you use matters greatly..."You may not think the type of almond flour you use matters, but you will notice a huge difference once you try it. You breads will rise better and you will no longer have slightly soggy muffins. The consistency is the closest to white flour grain-free can get!" She recommends using Honeyville Blanched Almond Flour. From my experiences now I agree. Thankfully, our Costco carries this brand. It was $17 for a 3lb bag but, now it's $19. 

This bread is also SCD, Specific Carbohydrate Diet. Definition from, www.scdlifestyle.com..."The Specific Carbohydrate Diet (SCD) is a group of foods which are grain-free, sugar-free, starch-free, and unprocessed.  While removing many foods that are toxic and digestively harmful the diet remains natural, extremely nourishing and representative of what our ancestors ate." A diet which I'll be following more shortly in the future to improve the health of my digestive system.

SERVES: 2 mini loaves

Ingredients:

  • 1-1/2 cup blanched almond flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • 3 eggs, beaten
  • ¼ cup honey
  • 1 ripe banana
  • 1 cup shredded, unpeeled zucchini

Instructions:

  1. Preheat oven to 350 degrees Farenheit.
  2. Combine the dry ingredients in a small bowl.
  3. Place the wet ingredients in the bowl of a stand mixer, then beat on medium for 1-2 minutes until frothy and fully combined. Add the zucchini and beat again just enough to incorporate.
  4. Slowly add the dry ingredients with the mixer running, until all of the flour mixture has been incorporated.
  5. Spoon the batter into 2 mini loaf pans. You can also use this batter to make muffins.
  6. Bake for 30-35 minutes until the middle is set and a toothpick comes out clean.
*I can't have honey, so I use maple syrup or just a little more banana.

Theirs vs. Mine

 We had this spaghetti for dinner one night...I made the sauce from organic canned tomatoes, added spices & herbs, veggies (green peppers, onions, garlic), cooked up organic beef, baked asparagus, and boiled some organic quinoa/corn noodles. It's gluten-free. I'm trying to use less and less wheat for my family.

Then there was mine...

I'm doing totally grain-free. I've gone gluten-free, but never grain free. Basically, grains and meat, especially large quantities of both, don't mix well in the digestive system and can cause more discomfort and problems.  Ever heard that the gut is the brain? Make sense to me. It's vital for our guts to be healthy and strong so that the rest of our body can function and work properly, like our brain. Eating healthy fats for brain development/nervous system development is so very important especially in the womb as a fetus and as a growing child. We gotta promote healthy guts for healthy bodies! But, gong grain-free isn't for everybody, it just depends on the way you metabolize, convert, and use your food. Some do better than others and their bodies need very different foods for energy, strength, health, stamina, and life! That's why is so important to listen to your body.

So, for my noodles I julienned zucchini and then steamed them for my noodles. Then added the sauce on top. I'm super sensitive to a lot of foods and lately wheat and grains have been bothering me, so they are out of the menu for me. Which means I pretty much eat Paleo Diet and have noticed a big difference in the way I feel. Onward to bigger and better!

Zucchini Hummus


Wow! This Zucchini Hummus was super good!

Steamed Zucchini blended with...
Tahini
Garlic cloves
Olive Oil
Lemon Juice
Cumin
Sea Salt
Cayenne Pepper


These Skinny Crisps are also delicious...



I hope we end up in the Denver, CO area sometime!

Zucchini Hummus is also very good with celery, bell peppers, carrots, etc.

I made my own Chicken Bone Broth. Added garlic, onions, celery, and strips of zucchini.

 This recipe is from The Simple Veganista. I thought it was delicious, but my kids said, "Mom, this is the most disgusting dinner every!" Ha!
