Chicken Sausage Garlic Parmesan Pasta


I wasn't sure what to make....hmmm, what to do what to do?????

My oldest spoke up and said Alfredo!!

And I remembered I had something similar posted on my cupboard from Damn Delicious....One Pot Garlic Parmeasan Pasta! The Fish Fam always loves this dish, which I have changed up a little bit....


  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 med. onion
  • 5-6 shitake mushrooms
  • 1 package chicken sausage
  • 2 cups chicken broth
  • 1 cup rice/coconut milk, or more, as needed
  • 2 tablespoons unsalted butter
  • 8 ounces uncooked fettuccine
  • Kosher salt and freshly ground black pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley leaves
  1. Heat olive oil in a large skillet over medium high heat. Add onions, garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes, then add chicken sausage.
  2. Stir in chicken broth, milk, butter and fettuccine; season with salt and pepper, to taste.
  3. Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes. Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached.
  4. Serve immediately, garnished with parsley, if desired.
* I doubled the recipe.. 
This pasta dish smelled so so good.

Melt In Your Mouth Meatballs


I made these meatballs the other night and heard over and over how good they were!

I found them over at Genius Kitchen who spotlighted Kittencal's Italian Melt In Your Mouth Meatballs.

Instant Pot: Jumbo Shelled Stuffed Ricotta Chicken Basil Pasta


To many words to describe the goodness of this! The Fish Fam loved it.

There is organic frozen chicken breast at the bottom, topped with jumbo shells stuffed with ricotta cheese, 1 jar of organic marinara sauce + 3/4 jar of water poured throughout, topped with onions, garlic, and fresh basil.


Cooked for 12mins after it reached high pressure which took about 30+ mins. And after a natural release of about 10mins. Total prep and cooking time was an hour. Love my IP (Incredible Pot)! 


It's pretty darn amazing because the chicken breasts were frozen.

I steamed some broccoli and shredded the chicken and whalla....


Dinner is served. 

Definitely a fish fan favorite.

Zucchini Pasta + Creamy Avocado-Cucumber Sauce

 This recipe is from The Simple Veganista. I thought it was delicious, but my kids said, "Mom, this is the most disgusting dinner every!" Ha!

Lasagna, Asparagus, & Garden Salad

My husband and I got to make dinner together...I chopped up everything and he made the Lasagna.

Lasagna
Boil lasagna noodles
Cook meat in pan w/garlic & onions
Add spaghetti sauce to meat
Lay noodle, meat, and veggies every layer
Layer w/or w/out cheese
Bake in the oven
abt 375deg for 15-30min

Salad 
Organic Romain & Red Leaf
Fresh organic parsley 
Red onions
Organic carrots
Organic cucumber 
Tomatoes

Asparagus  
(Raw or Baked)
Raw just wash & eat!
Bake at abt 375 deg
Olive Oil
Sea Salt, Garlic Powder, & 
No-Salt Seasoning
For 5-10min


Broccoli Pecan Pasta

Tru Roots Gluten-free noodle, lightly steamed organic broccoli, pecans, Italian dressing, & cayenne pepper.

Good Tip with the Broccoli...

After steaming put in very cold water or ice water to stop it from cooking and losing more nutrients. We like our steamed veggies to still be a little crunchy.

Butternut Broccoli Pasta & Salad

This dish is quick and easy! 

Boil the noodles, lightly steam the broccoli, add the sauce, and spices (Organic No Salt Seasoning, Cayenne Pepper, and Peppercorn.) With a yummy salad...lettuce greens, celery, carrots, and green peppers.

I used organic noodles mixed in with this gluten-free noodles. I really like the tru Roots brand that I find at Costco. I also like that it's from Italy. One of my Aunt's daughters has celiac disease and she said one of her friends also had celiacs and said that when her friend went to Italy she said she was just going to eat all the pasta she wanted! Come to find out none of the pasta there bothered her tummy! Our bodies genetics know that "ancient grains" or "ancient seeds" are clean, pure, and nutritious. Our bodies have become sensitive and intolerant to too many foods that man has altered, especially here in the United States. The US is one of the world's top leading producer of genetically modified crops.

This sauce is really good! 

I get a pack of two at Costco for around $6 or $7 (Costco always gets it on and off, so I stock up when I see it.) I saw it was at our local grocery store for just over $6 for one bottle.

Aparagus & Pasta Green Salad

Last night I went to my grandpa's 80th bday party! One of my Aunt's made an awesome pasta salad tomatoes, red onions, olives, raw asparagus, freshly diced garlic, whole wheat noodles (or some kind of gluten-free noodle), and a little bit of Italian dresing. I took some home and today for lunch mixed it in with my salad greens...organic red leaf and green leaf lettuce, organic parsley, and I can't leave out the fresh avocados! Wow, this was really good! Thanks Aunt Nita for the inspiration!

Butternut Squash Pasta

I know this is not the prettiest photo, in fact I know not all of my food photos are. So, bear with me as it is a work in progress. :) These are organic pasta noodles with Dave's Gourmet Butternut Squash Pasta Sauce (excellent deal at Costco). I chopped up red onions and garlic (I love these two ingredients) and cooked them in the organic ground turkey meat on the stove. I chopped up zucchini and then threw them and the corn in the pan with the sauce and let it warm up, not cooking too long. I also like putting in raw pine nuts in pasta, something I picked up from a friend...Thanks Letha!

Spinach Tomato Italian Sausage Pasta

I made my own sauce from organic canned tomato sauce and paste. I add in a lot of oregano, basil, and rosemary. I chopped up lots of garlic and onions. I also added in fresh tomatoes and spinach, not letting these last two cook for too long. The Italian sausage makes it taste even better! The bow tie pasta gives a nice look and the toasted rosemary bread is tasty!
